सर्दियों में आलू-पालक मतलब पौष्टिक, ताज़ा पालक के पत्ते और गरमा गरम आलू| Try karna toh banta hai. This aloo palak is a side dish from North Indian cuisine made by stir-frying potatoes and spinach. It is a healthy and delicious vegan dish made with minimal use of spices.
Spinach is a nutritious vegetable, it is believed that spinach was first grown in Persia (modern-day Iran). It travelled to India from there.

Aloo Palak
Prep time - 15mins
Cooking time - 25mins
(Serves - 2)
Ingredients:
Oil/Ghee - ¼ cup
Dry red chilli - 3-4nos
Heeng (asafoetida) - ½ tsp
Cumin - 2tsp
Garlic chopped - 1tbsp
Onion chopped - ¾ cup
Ginger chopped - 1tbsp
Green chillies chopped - 1no
Potato (peeled & diced) - 2cups
Turmeric - ¾ tsp
Chilli powder - 1½ tsp
Coriander powder - 1½ tbsp
Tomato chopped - 1cup
Salt - to taste
Kasoori methi - 2tsp
Spinach (keep whole) - 3 bunches
