Rogan josh, also spelt roghan josh or roghan ghost, is an aromatic curried meat dish from Kashmir.
It is made with red meat-traditionally lamb, mutton, or goat-and coloured and flavoured primarily by alkanet flower (or root) and Kashmiri chillies. It is one of the signature recipes of Kashmiri cuisine.

But today we are making Mutton Rogan Josh using Ratan Joth, Please follow all the techniques mentioned in the video for best results.

Ingredients for making Kashmiri Style Mutton Rogan Josh Recipe
.
Curd - 300 gms
Fennel Powder - 1.5 Tbsp
Dry Ginger Powder - 1 Tbsp
Shahi Garam Masala - 1 Tbsp
Salt - to taste
Kashmiri Chilli Paste of 12 Chillies
Water
Mix Well
Mutton - 1 Kg
Mustard Oil - 1/2 Cup
Bay Leaf - 5
Cinnamon - 1
Mace - 1
Black Cardamom - 2
Green Cardamom - 8
Asafoetida - 1/2 Tsp
Add Mutton Pieces
Add Curd and Spice Mix
Clarified Butter - 3 Tbsp
Ratan Jot - 1 Stick

Ratan jot ek dry kisi tree ki chhal hoti h jiska rani colour hota .aur usko nonvej me curry ko red karne me use karte hen .jab chilli ka colour yellow hota h tb motton me red colour lane k liye use karte hen

This is not authentic Kashmiri Pandit Roganjosh receipe. We do not use Ghee & Ratanjyot. We also use Red Chilli powder.

Merey dost... Authentic Kashmiri rogan josh is like a stew & has a thin watery gravy which is had with steamed rice...unlike what you have done with the gravy ..At best yours can be called Punjabi Rigan Josh! 😂

You didn't tell the quantity of mutton taken accordingly spices & oil etc. are added. Without giving quantity the recipe is incomplete. Please do corrections in the video.
