I used a disposable aluminum pound mold.
Any mold doesn't matter.

A Crème Llégère is a cream with less than 12% milk fat.
That is why it is also called light cream or low-fat cream.
I think it's the perfect cream for this tart with a lot of fruit.

Heavy Cream (35% milk fat)

220g all-purpose flour (1 cup = 1/2 cup)
135g unsalted butter ( 1/2 cup + 2Tbsp)
50 g cold water ( 3 Tbsp + 1 tsp)
6g sugar (1/2Tbsp)
1 g of salt
1 yolk
♥ Triple Berry Compote
150 g strawberries
50 g raspberries
50g blueberries
40g sugar (3Tbsp)
1/2 lemon juice
♥ Rich Vanilla Crème Lesère
yolk 1
30 g sugar ( 2 Tbsp + 1 tsp)
8 g cornstarch ( 1 Tbsp )
100g milk (1/3 cup + 1 Tbsp + 1 tsp)
1/3 vanilla bean
8g unsalted butter (1/2Tbsp)
80g heavy cream (1/3 cup)

yolk 1
10 g milk ( 2 tsp)
♥ White Chocolate
