"Somen" are very thin Japanese noodles made from wheat flour.
This noodle, which is often eaten in summer in Japan, is made in midwinter. It will be made thin and long with time and effort
Completely adhered to the Miwa Somen factory "Tamai noodle factory" from 3:40 am. We had them show us a lot of the manufacturing process over two days.
At this time, the finest somen "Milky Way" is made.
Let's take a closer look at the process of making Miwa Somen noodles in Sakurai City, Nara Prefecture, which is said to have the roots of Japanese somen.
Amazing process! Very thin Japanese noodles that are thinned over 2 days!

My grandmother ( from the coastal area of Zhejiang, China) also made these noodles, in basically the same process, and they were made by hand . It is pronounced "su mian" in the dialect. I remember as a child running through the wooden racks where the noodles were drying, and the light falling on my face through the noodles.

When watching this video, I was amazed at the time it took with modern day machinery, it made me keep thinking about how long it must have taken 100 years ago. I know this process was in a factory to make up 1,000’s of bundles in those 2 days, but still the process to make 1 bundle or a 1,000 still is the same. Today’s noodles were all perfect in length and thickness. Imagine 100 years ago, kneading the dough by hand, age it, knead the aged dough into desired size and thickness, several times, aging in between, once that’s done, then the noodles need to be stretched several times to desired length and thickness, drying them, stretch and dry again and finally after 2 days, you can finally eat your wonderful hand made Somen noodles. Amazing dedication to their craft.

I guess I never really considered the production (professional) of noodles... There were many interesting uses of what appeared to be custom built machines and processes. I hope they are able to package off the trimmings, and find a market for them. And that the employees are welcome to the "irregular" pieces that wouldn't be the final product(s), those are often just as good, and still edible, it would be a nice perk for working there... Thank you for allowing us to see this more traditional production of noodles

Amazing work!!! actually an art to make food this way! subtitles with ingredients or why they take them outside the building toward the end would be nice to feed my curiosity. I bet the noodles I buy are not made with this much perfection and love just in a fully automated factory.....

I will NEVER look at a packet of noodles the same way again. I love how almost all of the machinery in that factory is on wheels (so basically everything's modular and can be taken in or out depending on where they are in the process). And the different noodle-stretching machines! They absolutely astound me. Someone had to think carefully about each step in the process, how far the noodles needed to be stretched and what motion could do it without breaking them. Thank you so much for sharing this video, and thanks to the company that allowed us an inside look!

I have so many questions! How do they clean these machines? What happens to the bits of noodles that do not get packed because they are too short or broken off? What do you do if a machine stops working? Are all the technicans also mechanics who can maintain the machines? Is it okay to let the noodles dry outside in the sun? What happens if there's wind? or if there's clouds? How do you keep it hygenic? Most importantly - whats wrong with other ways of making noodles? How are these noodles different? Do they have a different flavor? Or a different texture? How should I cook them properly? So many questions!!!

I wonder, how long this one production run of noodles will last for their customers; 1 day, 3 days. 5 days, maybe 1 week? So much work goes into producing these noodles. They must be delicious! Are they expensive to buy? With so much labor invested in making them, I would think, yes. Are these noodles only made for special occasions? A wonderful demonstration of fine baking tradition. Thank you from NC, USA!

They work smart. They treat the noodles like a real VIP. It's worth every minute watching this from start to finish. There can never be another factory like this because all their equipment are purely fabricated for this factory only, and it takes years to calibrate them to such precision.
