A tip to peel the plantain is to poor some hot water over it, make a longitudinal slice along the plantain, and peel it off on the opposite direction. The heat will ease the process of peeling the plantain. Great job with the plantain.

Im not Haitian but I lived with Haitian family and my Haitian ex boyfriend of 6 years and his mother and aunties taught me . Trust, the mother in law was very gracious and kind; none of that food was prepared correctly or cooked well. Haitian food takes longer marination and specific techniques to taste authentic.
