Hello Charlie! No. There is no difference in the beer culture in the north (Flemish) and south (Walloon) part of the country, but typically any Belgian will try the local beer when travelling around the country. As you are making some considerable efforts in learning Dutch, you should have noticed that most of the people in the video speak Flemish. You might not recognize it, because Flemish sounds softer, less guttural than Dutch, but it's basically the same language. The region around Brussels has a unique brewing process that goes back to very specific bacteria and yeasts in the water and in the century old walls and air of these breweries. This creates a natural fermentation (wild fermentation) that is impossible to reproduce and creates a sour beer called Lambic, that is then processed into Gueuze beer. Some of these Gueuze beers are so sour that it is actually ok to add a lump of sugar to it. Apparantly a lot of American tourists are buying these now. My personal favourite is Orval, a real monk's trappist beer, made in an authentic abbey in the south of Belgium: very fresh and hoppy, not too strong (5.2%). If you let it rest for a year or so, it will get stronger, but I never manage to buy any and just let them sit there 🙂You won't find them in the US, as these monks stick to their vows and don't want to commercialize it. These abbey breweries can be centuries old, at a time that water was not hygienic to drink and the fermentation process made beer the every day healthy beverage especially for the poor and the working classes, just like in the UK, the north of France, (the south of) the Netherlands, Germany, the Czech Republic, ... where they also have a good beer culture. The recipes are not necessarily that old, as the lady explains in the video, because of changing technology, health standards and taste. The red beer you saw is Gueuze Kriek, a sour Lambic with cherries added, to give it an nice flavour. More commercial Kriek (cherry) beers have more sugar in it, so it becomes sweet. One for the ladies who don't really like beer. See you soon with more about Belgium!

As a Belgian from Wallonia, I don’t thing there is big difference between the two parts of the country. Trappist beers are the most traditional beers of Belgium and often the better, but there is also a lot of little breweries that make excellent beer. You definitely need to try the Chouffe and the Lupulus from my region of Belgium… and with the good glass.

Leffe brune or Blonde (pronounced Leff like Jeff, drop de last "e") is not a "good" beer. It's at best average, I use if for cooking only, not for drinking. Try the Trappists beers like Triple Westmael, WestVleteren XII, Chimay Blue or White, Rochefort Blue cap, Orval .... The plates he speaks about in the restaurant are: -Carbonades Flamandes (Flemish stew) consists of beef braised and low cooked in beer with onions, gingerbread-mustard seasoning. -Anguille is eel with veggie sauce and shrimp sauce (he talks about Orval base dressing) -Foie Gras (Goose of duck liver) made with a Rochefort sauce.

As a Flemish person myself i always enjoy trying out new beers when i'm enjoying one on a terrace in the sun or in a restaurant. Most of the time i go somewhere there are beers on the menus i've never tried before, but a go-to beer for me is Westmalle Tripel, it's not a dark brown beer but i love the taste, somewhat soothing. Some regional beers can be surprisingly good also but therefor you should come to Belgium to try some out since sometimes they are not even exported out the city/village. Just try new beers, explore, find what you like and most of all enjoy!

The beer culture is the same across the country. No matter where you go in Belgium, it's a crime to drink beer in the wrong glass. In fact, it goes so far that any beer that is produced at scale will have a glass designed specifically for it. Most towns will have at least one bar that serves 300+ beers which means they also need to manage a huge glass collection which I've always found quite impressive. Also, when you are served a beer, the waiter will always make sure the logo points towards you. This way you always know what you're drinking.

Most of the time they will wet the glass before pooring the beer in to it too. To get the perfect amount of foam. The perfect amount of foam is one of the most important things about Belgium beers. Ik must admid, i cringed when i saw the tastings in wine glasses. But they are probably blind tastings. If they would use the right glass, they would know what beer it is.

@@atropatene3596 i restrict to types of glass, but still a mistake, pils should be in a pils glass with ribbles ;-), and palm is round glas :) i have pilss glasses, leffe, duvel, and 2 in between glasses, and i serve a beer in the glass that is closest to the offcial glass in general, and it DOES make a difference ! like the duvel glas has a special zone at the buttom where the glas ain't smouth, so bubbles can start from there, (rising in a D shape ;-) ) beer really taste different it glass is smoother or more oneven surface as interted, so you lack just a bit of the full taste experience in the wrong glass !

The monks of Val Dieu abbey (from 10:57) started brewing beer in 1216 AD. Today's recipe will have changed over time, but the base of these abbey breweries hasn't changed much. Leffe is good, but it has been commercialized and is brewed in a huge factory: the Stella Artois factory. Official "trappist" beers, like Chimay and Rochefort are really delicate and delicious. And strong: Rochefort 8 has an ABV of 9.2%. And then there are barley wines: a very strong and dark beer having 10-13% alcohol. Examples: Grolsch Kanon (11.6%), Hertog Jan Grand Prestige (10%) and Rochefort 10 (11.3%)

Belgium beers are so good. I’m having one tonight; it’s carnival. Trappist beers army favorite. Chimay , blue one 9% Rochefort, blue one 10% Westmalle tripel 9% Other beers: Karmeliet 8.5% Duvel 9% Deugniet Brugse tripel Brugse zot Etc Leffe is industrial beer. Not bad but beers from Trappist, brewed by monks in a monastery are the best. Beers from former abbeys are also good 3.5% or less beer is rubbish except for use at lunch or diner. 5% is minimum; most pils-beers are 5%. I really don’t like the taste of 0% beers. No difference in beer culture as far as I know about; it’s called Belgium beer culture. Foie gras is animal cruelty. It’s made of the liver of force feeder geese.

Our country has so many different kinds of beer and each of them are unique. going from very low percentage of alcohol to the big boys ( chimay, rochefort etc ) and fun fact is that for every style of dinner (meat, fish, pasta etc ) there is a different kind of trapist/beer. Also since you mentioned american beers, every American i personaly know that has visited Belgium says the same: We Belgians have an extreme high alcohol tolerance level. Im not sure if that's because we are used to higher percentages or if that's because you Americans arent used to "real" beers xD but anyways, i see people suggesting all kinds of " mainstream " trappist beers and that's good, they are realy good beers tho, but if you want to try less know ones, i would suggest to just try region related trappists, the ones brewed in small local breweries. Reason here for is less commercial, more authentic flavor due to regional products. Im not sure if you can import these so you'll have to visit our small country one day and go on a brewery roadtrip to taste all the different beers yourself.

Foie gras = duck liver Orval = a very unique amber-colored beer that's on the expensive side, more elite beer. It has a quite distinguished taste that is not for everyone, but is used in a lot of traditional dishes 15:31 that beer is called 'kriek', its a beer made from sour cherry's, it's quite sweet and is concidered a more 'feminine' beer in Belgium if you like dark brown beers, then you should be on the lookout for these: Chimay Bleue, Brussels beer project: dark sister, Westmalle (the double is dark, the triple is light coloured but is concidered a favourite amongst belgians), gulden draak, gouden carolus, and the list carries on!

One of the most important things is thé yeast. In trappist beers, the yeast is sometimes 100 to 200 years old. (Not liturally. It multiplies itself.) It's a specific yeast per beer. If their specific yeast dies, they can't produce that specific beer anymore.

As a Flemish guy (so the northern part of Belgium) I can only concur with what was said by other posters. We all love our beers, we travel around and try to discover something new by tasting the local beers and nope, there is no real difference in beer culture between the north and the south. There are some big differences in what different regions are brewing (water and traditional recipes play a big part in that) but beer is and remains the n°1 drink in Belgium while over the years I have seen a slow decline in popularity in commercially brewed 'common' beers, but an increased interest in traditional, local and more special beers. A weekend trip on a sunny day to another part of Belgium very often includes a (few) stop(s) at local cafés, preferably on the terras outside, and some local beer tasting. Also it is quite common today to have an evening diner at a fancy restaurant with an elaborate menu of dishes all accompanied with some exquisite and special beers (back in the days, It used to be French wine exclusively, now things are different). Good luck and much fun on your further discoveries of European and Belgian culture. Salut à mes amis en Wallonie. Vriendelijke groeten aan de Vlaamse vrienden.

As a Belgian, I can recommend "DUVEL" beer(which is translated "DEVIL") its a high alcohol-grade beer, with a golden color, But if you want a sweet beer, try "KRIEK"(cherry)-beer which has a red color, women like to drink it (and oddly enough, it's good on your stool) There are several TRAPPIST-beers(brewed by monks and brothers of abbeys) which are very good; many bare the name of the region they came from, like CHIMAY, WEST-MALLE, OOST-MALLE. If you like the more grainy tastes, I recommend "PALM" or "KWAK" beer(which is rumored to be a beer drank by coach-men); If you can, drink it out of the glass that goes with the beer(that is also a sort of tradition, a special glass for each beer... Unfortunatly, this tradition is about to become lost, due to the cost in making those for each seperate beer...)

Hi Charlie, If you like Leffe, you must try Chimay, Rochefort, Westmalle, Westvleteren or any other Trappist beer. It's like the difference between wine and champagne. Leffe is plain wine, but a Trappist beer is our champagne. The red beer you saw is "Kriek" these are beers based on a sour cherry. And the Barrels you saw in the video are the barrels that are used for making "Geuze" a special beer, that is naturally fermeted in the Brussels region. Belgium has over 1600 different beers. Which are the tougher meat from a cow slowly coocked with union, a brown beer (i use Sint Berndus 12 for it), Luikse stroop (syrup from pear), meatbouillon, and bread smeared with mustard, peper, salt, thyme, laurel and a piece of dark chocolate for the coloring. But it can also be a rabbitstew or something else. - The last one i have no idea. But it is mashed popatoes again. Where are the fries? The thing the Belgians are most proud of?

Belgian here! My favourite is Lindemans Kriek, a cherry fruit beer. It's amazing! A really fun one is Kwak, which is in a special glass (the one at the start in a wooden stand) that you have to drink from in a certain way or it might splash you in the face. It has that funny shape because it was designed for people riding carriages so it could be brought along on the carriage without spilling.

Foie gras is goose liver pâté. The production of foie gras is prohibited in the Netherlands and many other European countries. The reason for this is that the production of foie gras is accompanied by force-feeding that is considered unethical... in my opinion they torture those poor geese.. they force-feed them with a funnel!
@impala5598

Foie gras is not goose liver pâté or meat loaf of any kind. It is the liver from geese or ducks, which have been forced fed with cereals and other fattening food, in a very unethical and more and more despised way, to, in final, obtain. a very fat liver. that can be prepared, cooked, and served in different ways. I know it is a very. barbaric custom, in practice for centuries, and I understand why it is the subject of much critic. But I have to be honest too : and I cannot help but confess that a nice slice of foie gras, on toast, with onion and raspberry jam, and a glass of "Sauternes", or any other well chosen beverage, is. very, very good and yummy, and I, for one, can say, without much shame, that I like it. very much on special occasions !! IMHO I have no intention to. hurt anyone feelings in saying this. !!

Talking about a strong beer culture, Geuzes, which are stuck/stabbed ('Geuze steken' in Dutch) from Lambiks, the spontaneous fermentation beer from the Zinne valley, are often sweetened artifically because they are sour and those have become very commercial. So to protect the tradtional Geuzes they got the name "Oude Geuze" to put on the bottle to distinct them from the commercial Geuzes with sweeteners added. But one 'Geuzestekerij' refuses to bare that name because company says there's no Old Geuze, there is only Geuze en there is fake, so they refuse to use the term that protects and distincts them and could make them more money becaus they believe it just isn't right.

For a simple recipe involving (Belgian) beer: Get some pork sausages. And grab the smallest pot you can fit them in. Melt some butter over a medium fire, gently fry the sausages for a minute or so on each side, then turn the fire all the way down, add chopped onions, some uncut garlic cloves, and let that simmer for another minute or two. Add a bay leave, some cloves, a couple of juniper berries, salt and pepper. Pour in a bottle of brown beer (Leffe for instance). The sausages should be almost submerged, you can add some water if necessary. Bring to a boil. Put the lid on and let it simmer on the smallest fire available for an hour. Serve with boiled or mashed potatoes (with the gravy from the sausages of course, pick out the bay leave and the juniper berries) and veggies of your choice or a salad. Have the same beer you used earlier to accompany it. Bon appetit!

hey! I'm a belgian and I have a few answers to the questions you were asking during the video: 1. the first food item shown is duck liver (foie gras translates literally as "fatty liver") and the sauce is onion confit, it's a sweet and savoury dish 2. rochefort and orval are both beers (they get their names from the villages where they are produced) 3. eel is served in a couple of different ways here, the most common being "paling in't groen", or literally "eel in the green", which is eel served in a parsley and mint sauce, it's remarkably fresh and a nice summer dish 4. The abbey recipe is probably around 300 years old and i don't mind but it's pronounced "Leffuh" (or "Leff" if you're french speaking) and "Stella Artwah"

A little help on the correct pronunciation of our beer names: * Leffe : say "Leffuh" * Stella Artois: say "Stella Artwa", with the emphasis on the "-twa" * Trappist : pronounce it with a short "i", like in fish or piss :D * Westvleteren : pronounce "westvleyteren" , like in "hey" - Foie Gras is fattened goose liver - A vinaigrette is au vinegar and mustard-based sauce that is mainly prepared and served cold on salads, but some are served lukewarm - Orval is a trappist abbey beer, which has a quite hard, bitter drink when it is young, but you can have it ripened in your basement (any cool and dark place except a fridge) for many years. In some regions, Orval is so popular that customers sometimes fight over it when employees are putting the beer on the shelves. Even more mystical and popular is the Westvleeteren beer, another trappist abbey beer.Chimay Blue, Red and Tripel are the most common ones. - No, there's no difference in beer culture between Wallonia and Flanders. Once you drink beer, one doesn't give a sh*t anymore about the differences in politics and languages :) - The red colored beer is the "Kriek" (means "sour cherry) gueuze beer made by the Boon (pronounce like "bone") brewery. Gueuze is a beer that is created through wild fermentation. It cools down in open air, where it captures a special, harmless bacteria that creates the fermentation and the very specific, vintage flavors. That first brew creates a "lambic" beer. Geuze beer is created by blending several different Lambic beers of different years. They are put in wooden barrels (often former spanish sherry barrels) to which fresh sour cherries are added to macerate in the beer. It is not sweet, it is a very bold bitter, refreshing taste. Ideal for drinking on hot summer days. They also macerate raspberries and peaches in gueuze beer. - When you want to start brewing, check out for plug & play sets of "Belgian Ale style" beers. You don't need that much extra tools, except for a big pot to cook your mash

many of the breweries produce a special beer for Christmas (sometimes called Winter Beer) they are usually stronger and have additional herbs. I like to visit Belgium around January and February when you can pick up these beers at reduced prices. €20 for a crate of 24 bottles is not unusual and, for me, they taste better as they age. The Val Dieu monastery was founded in 1216 but not sure how old the beer recipe is?

Foie gras is duck or goose liver pâté. It literally means "fat liver" in French. It's pretty controversial because the animals are force fed way more than they would eat voluntarily in order to fatten their liver. They literally stick a tube down the animal's throat and pump in a corn-based porridge multipple times per day, causing their liver to swell up to 8-10 times the normal size. If you get a chance, you should definitely try a blue Chimay. It's widely considered to be one of the best beers in the world, if not *the* best. The red one looked like a Liefmans Kriek. It's a sour cherry beer, but somewhat sweet.

These beers are very special and absolutely delicious, with a mild soft sweet taste and are usually served in a narrow tall glass, somewhat similar to a champagne glass as these "fruit" beers usually are the preferred flavours for the ladies and then a slender, sexier glass is preferred... But hey, I do like these fruit beers as well and there are a huge number of other variaties of fruit-based beers, all with a lovely flavour!! Jake

Talking about minor differences here, Trappist is a beer based on the monk recipes, still being brewed inside of the monastery/abbey walls. Not necesserily brewed by the monks themselves anymore. Abbey beer on the other hand is beer made off of those same old abbey recipes, but they are mostly brewed by big coorporations these days. Leffe is a good example of an abbey beer. Westvleeteren is a trappist, brewed by the monks still, but they let their recipe become known at some point. the Abbey beer "Sint-Bernardus- abt 12" is actually the westvleeteren recipe with minor tweaks ;)

there are restrictions regarding ingredients. In Belgium, you must have a certain % of barley malt or it can't be called beer.... No cheap corn malt in our beers non non non. Kriek is an example of wild fermentation which is why it's exclusively brewed near Brussel's canal. No "gueuze" brewed elsewhere are allowed to use the name. 07:31 it''s foie gras ^^" duck liver here as pate...Though I think the dishes he's showing aren't those he describes ^^" 15:35 from what I can see that must be a Kriek or at least a cherry or raspberry gueuze. Gueuzes are sweet fruit beers (the Pecheresse is peach flavored, the Rosée d'Hoegarden is raspberry, the Kriek is cherry, etc.)
