Nei Paayasam
Ingredients:
- Raw Matta Rice (Unakkalari) - 250 gm
- Jaggery - 750 gm
- Coconut Pieces (Thengakotthu) - A handful
- Ghee - as needed
- Raisin - a few
- Kalkandam (Rock Sugar), broken into small pieces - a few
Instructions:
- Coarsely blend the rice
- Wash it thoroughly and keep it aside
- Keep an uruli (thick bottomed pan) on the stove
- Boil 7 glasses of water
- Once it boils, add the washed broken rice to this
- Let this cook in a medium flame
- Keep another pot in the stove
- Melt jaggery by adding 1 glass water
- Once melted, sieve this and keep it aside
- Keep stirring rice and check for doneness
- Once it has cooked enough, add the jaggery syrup to this and stir this occassionally
- Keep another pan on the stove
- Add some ghee and fry the coconut pieces
- Add 2 teaspoons of ghee to the rice and jaggery mix
- Keep stirring
- Once the paayasam has thickened, add the fried coconut pieces
- Add a few more teaspoons of ghee
- Add raisins to the paayasam and sprinkle some kalkand too
- Ambalam (temple) style Nei Paayasam is ready
