Long-term Subscribers to our channel know, you never really know what you're going to get with a video from us. We don't do "stuff" just to film it. Whatever we're doing - we film. So you may end up with gardening, canning food, raising pigs, butchering chickens, managing an orchard, a trip to our off grid cabin in the woods, a fishing trip, kayaking, etc. It's all here. And today's video is no different. As dinner time approached, and Todd was returning from a day at the office, Rachel got to cooking a quick and easy pasta dinner. And then we both work on getting caught up on processing a table full of food in our kitchen. Pepper chopping, grating Zucchini, dehydrating sassafras leaves, and making vanilla extract with some cheap Vodka.

You can pour more vodka over the old beans and use them again, they're good for more than one batch of extract.

I use to drink sassafras root tea when I was younger. I'm 53 and not dead yet. And I have a 15 year old bottle of vanilla that I just keep adding vodka and beans to. Hmmm yummy.

Nice video - really like visiting a friend on a weeknight. You're giving people who are isolated a sense of socializing which is a sort of public service. BTW: Easy way to prevent iced chunks of peppers is to lay the chopped peppers out on a baking sheet and flash freeze them then put them into bags. I have found that to be the best way to freeze chopped peppers - never stuck together.

Just a tip. When you get most of the seeds out with a large knife, switch to a spoon because you can more easily get seeds than the meat of the zucchini. Ive found with a knife I loose more meat with a spoon I get more seed and less meat. Love yall!

I watched a video on making vanilla and she suggested waiting 18 mos for really good vanilla. I used to wait 3 mos. and use... but I’m gonna try a couple batches spaced out every 3 mos to try it. Just sharing that info

I freeze peppers like that also. Green onion and onion to. The only difference though I chop them up then spread it out on a cookie sheet and freeze that for an hour or 1/2 hour then put them in gallon bags. They don’t stick together in the bag. You can do that with cantaloupe to. It’s awesome.

Yummy. Looks tasty! We had green beans from the garden with dinner tonight. My wife boiled them to cook them, the finished then up in the cast iron skillet with butter and garlic. 😋😋 -Robert

Tip from an italian: you don't need to boil tortelino separately if you plan to have sauce....just heat up the sauce/tort add a little water together and it cooks perfectly!

We used to go out and collect sassafras root for my Grandmother to have to make herself sassafras tea. Just another heart warming memory. Sassafras didn't harm her. She passed at the age of 101.

You two are great together. So nice to see. I really like your home. The beautiful moldings and the doors are so pretty. I love Vintage homes. I live in a 1946, 1200 sq ft frame house here in Fort Worth. It’s a cute house, but it doesn’t have those pretty wooden doors and moldings. Blessings always. ♥️♥️♥️

I do my peppers the same way you do them, dice and put into freezer bag. This year I tried putting them on cookie sheets after dicing them and drying them in front of a fan before putting into bags for the freezer. I thought by drying first I wouldn't have to bang them on the counter to separate them. Waste of time!!!!! They still stick together. 😊

Add more vodka to the bottle when the vanilla is used up. Those beans will give off more extract for more years. You can also use good Kentucky bourbon instead of vodka to make extract.

i actually have another trick to "opening" green peppers that i've heard people don't know of. It's the same idea as the knife, but without the up down of it. If you take your thumbs and hold the pepper with your thumbs on top of the stem, push down into the pepper and then pull it apart. Generally you only have one side with the seeds/stem and the other one is clean.

I love this channel. You two inspire me in so many ways. I don't have the energy level of you two, but you teach me how I can be better at harvesting my available food. You show a way of life so many have discarded. Thank you for sharing! 🙂

Where did you get your vanilla? I use it often and a bottle of vodka is probably cheaper than a third of the purchased expensive brands of vanilla extract.

I use cheap bourbon to make vanilla extract with. My baked goods are off the chart good with that. Everyone makes comments about wanting to know the secret ingredient. That’s my secret.

Just a tip you can use a 1/4 measuring cup to scoop out the seeds of Your zucchini way easier and not as dangerous as a knife

Thank you Todd for not posting the bee attack. White House on the Hill did. It was hard to watch. Their one hive went rogue and they had to exterminate the bad queen. I do enjoy your videos, especially ones like this. It reminds me of chatting to my aunts and cousins while we're all chopping up the veg for a big family dinner (which we've not been able to do all year and I miss it so much!). I core my peppers in the same way and have always been told it's a strange way of doing it, now I feel validated haha. I've not thought about smashing them though, that's a great tip.

Hi, how are you ? I Just finished my third Bottle of Madagascar Vanilla. I have only been canning for 2 years. Honestly I bought an all American Canner, and I had a jar break inside the Canner, and I haven't used it since. Only used it one time. So now I am thinking I might go ahead and try it again. Yikes !! My siblings used to put butter on bread then on the way to school they would get some of the leaves put them on the bread and have sassafras leaf sandwiches. They absolutely love them

I do my peppers like that all the time ,when I first put the bag in I leave it filled with air till the peppers are frozen. I walk by and shake them occasionally and then I dont end up with a block of peppers. I squeeze the air out once the peppers are frozen. God Bless 💜

I have been looking for vanilla beans. I can only find a jar with 2 skimpy little beans in it for $13.99!!! Yikes! Good thing I started a batch last year or Id be in trouble. As my husband has Crohn's disease, I have to deseed everything. But I use a spoon. I've been making my vanilla for 30+ years, nothing better!!

Thank you for the bee story!!!...Fall is horrible for beekeepers, the bees are so aggressive. I mow in my jacket, veil, and gloves because the bees will actually come down to my apple tress about 75 feet from their hive and nail me!!...just found you guys last month, love your videos!!
