Chef Fany Gerson shares her recipe for Pan de Muerto ( Dead Man’s Bread), a bread made all over Mexico for the Day of the Dead celebrations that take place during the first days of November. The event has its roots in Aztec times where it was believed that the deceased embarked on a journey to their final resting place. MAKES: 2 bread
INGREDIENTS
Bread
1/4 ounce active dry yeast
4 cups bread flour, divided
2/3 cup milk, divided
2 tablespoons orange blossom water
1/2 cup sugar
1 teaspoon kosher salt
1 teaspoon finely grated orange zest
4 large eggs, lightly beaten
1 cup unsalted butter, room temperature (you can save the paper to grease the bowl, or just use cooking spray)
Topping
1/2 cup (1 stick) unsalted butter
1/2 cup sugar

Thank you for sharing this beautiful recipe! As a bereaved mother I have found celebrating the day of the dead a comfort and a way to keep my son a part of our life. I am going to make this bread this year in his honor.

Thank you for sharing your technique, every year I make my pan de muerto at home, because the one at the Mexican bakeries are not as tasty as making your own. It is worth the time and work. I hope you show how you make rosca de Reyes. Another beautiful tradition.

It’s a terrific bread to make at home because it dries out so quickly. So much fun to see orange blossom water used instead of anise. A few years back I changed my method. I had a silicone cupcake pan (normal cupcakes size) and these days for my muertos parties I make individual ones , risen in the individual silicone wells. Wish I could share a photo.

I made this today and WOWOWOWOWOW it was absolutely delicious! The orange blossom water and orange zest gave it a perfect zing without overpowering the bread. Thank you so much for this wonderful recipe and well explained video.

Hello!!! It should be "Bread of the Dead" . Muerto literally means (Dead Man) but in this context muerto means ALL dead either man, woman, etc. :)

don't hate me, I'm not appropriating your culture except for this one time. both my parents died within the past six months. we are Irish, french canadian, white white white. whatever. I want to celebrate and honor them with food and music. it's so much easier than being sad. thanks for sharing this lovely recipe.

Hi Fanny, could you tell us how to make the chocolate swirls in the dough and the topping?? I am a chocoholic!! Don't have a stand mixer but I have a Black and Decker hand held mixer with dough hooks. And last is, why can't you substitute the juice from the orange, like a small amount if you can't find the orange water. Where I live I have 2 Mexican stores with little grocery area and a tortilla factory with essentials only.

orange juice has acidity which would impact the rise of the dough. It also has a very different flavor than orange blossom, which is a floral honeylike scent. I'd imagine vanilla would probably be a better substitute.

I agree, you’d be better off substituting vanilla instead of orange juice. I put vanilla in my version of this recipe and it’s a very nice addition

I don’t get the ‘bones’. What bones are they supposed to resemble?

none in particular, just the standard shape of the leg bones, i suppose. The thin middle part and the rounded edges that connect to the other ones.

I made this, I think it’s a good recipe but my efforts didn’t come out great and I’m thinking about chucking it all the trash. This baked fast! 40 minutes would have been a disaster, as it was my bread came out way to dark and I’m ashamed of it. The bones were not easy, fiddling hard. Eventually I got most of it. The sugar on the outside is way to much. Much better with butter, honey and zest. The whole thing would have been better as a braided loaf or sweet rolls. Orange blossom water? Hard to find and I could not find it unless order it in line, expensive to ship. All in all it was a learning experience. Not sure I would do it again. Will not be buying the book.

I will always recommend this recipe kzfaq.info/get/bejne/hOCaacaX3cvPno0.html, it's amazing, I have made it and my family loves it. (Although I make them smaller, the recipe says it yields for 3 big ones, but it's better to make 6 medium-sized ones, and when it comes to how much time you have to knead the dough, it took me like 20 minutes in my stand mixer, about medium, medium-hig velocity) :D

Ha, ok so you just don’t like Pan de Muertos then. That’s fine if you just want to make orange honey rolls or something but that has nothing to do with the intention of this recipe.

@@kag427 at least I tried it. I’m the only white woman in a Mexican Bible study and I like to do things for them. This went fast and over baked, way too sweet and they all said that. Since there are 16 of them all from Mexico they would know. I think the crumb and tenderness of the bread was good but the rest wasn’t. I would like to try it again with a different recipe. Also not sure they would use orange flower water in Mexico because it’s way to expensive and they wouldn’t waste the money.

@@jenpaulhome1 Yeah, at least you did try it. The baker states she is from Mexico City, and there the bread is flavored with orange zest and orange blossom water. I found the recipe to be lacking flour, but fixing that, the flavor and texture is very authentic. There are some regions in Mexico that use anise seed instead of orange/orange blossom water. And other regions coat it in sesame seeds instead of sugar. So, maybe they were more accustomed to other variations. This one is very accurate for the most common Mexico City style.

I’m in California and no Mexican market has that water (I looked and asked) the Arab markets might but they do not want to sell to me, I do not wear a veil and I do wear a cross. I’ve even called and asked permission and it was bad ☹️. So I used water and fresh squeezed orange juice. It wasn’t bad but not right. I love the women of my group, absolutely lovely and so kind, so beautiful. Maybe I’ll figure it out. Nice talking to you, my friends call me Jen.

Your so pale-my husband is Mex and typical dark. At festivals do they think your a tourists?? We eat this bread every year. His sister makes it. Yummy bad😇🌈🙏

Sharon, Mexican people can be white, brown, black, ginger, asian. I don't see how Mexicans would see her as a tourist.

This recipe didn’t work. That sounds like a lot of butter 1 cup? I have a big mixer and mixe d for over 20 minutes, it never became a ball. Very, very sticky. I make pan de muerdo all the time, first time this happened to me. I usually follow recipe es con ascento you tuber.

I agree, Maria. 4 cups of bread flour is 480g. After mixing forever it was still just a thick batter, not a dough at all. I ended up using 600g of flour overall and it’s still pretty sticky.
