INGREDIENTS:
* All-purpose flour (मैदा) - 250 gram/2 cups
* Salt (नमक) - as per taste
* Cumin seeds (जीरा) - 1/2 tsp
* Black pepper powder (काली मिर्च पाउडर) - 1/2 tsp
* Carom seeds (अजवाइन) - 1/2 tsp
* Ghee (घी) - 4 tbsp
* Water (पानी) - 1 cup
* Oil (तेल) - for frying
For Paste:
* All-purpose flour (मैदा) - 2 tbsp
* Ghee (घी) - 2 tbsp
For Powder:
* Kashmiri red chili powder (कश्मीरी लाल मिर्च पाउडर) - 1 tsp
* Black salt (काला नमक) - 1 tsp
* Dry mint leaves (सूखे पुदीने के पत्ते) - 1 tsp
* Black pepper powder (काली मिर्च पाउडर) - 1/2 tsp
* Roasted cumin powder (भुना जीरा पाउडर) - 1/2 tsp
* Chat masala (चाट मसाला) - 1 tsp
RECIPE:
Take All-Purpose Flour, put Salt, Cumin Seeds, Black Pepper Powder, Carom Seeds, Ghee & add Water in it gradually & bind the dough.
Give it rest for 20 mins. Make a paste of Ghee & All Purpose Flour & keep it aside.
Divide the dough into 4 parts. Roll them thinly, apply the paste on it & make a tight roll of it. Cut the roll into small parts & make small dough balls. Take a dough ball, roll it & apply the paste on it. Fold it then apply paste & again fold it & roll it. Prick it with a fork. In the same way, make all the Nimki/Snacks & fry them in the medium heated Oil.
For Kaju Mathri, roll the dough thickly & give it the shape of Cashews with a bottle cap. Fry them on slow flame.
For Masala, take a mixer jar, put Kashmiri Red Chili Powder, Black Salt, Dry Mint Leaves, Black Pepper Powder, Cumin Powder, Chat Masala & grind them all.
Sprinkle the Masala on the fried Mathri/Snacks. In this way, Crispy Mathri will get ready.
