DNA is scrambled randomly during fertilization. So we don't get all genes from our ancestors. It's a shuffle. Probably why your mom doesn't have the Italian DNA from her great great grandfather. The Swedish for you might be from your paternal side.

My partner and I did Ancestry DNA. He’s from Ethiopia and I’m from Central America/Caribbean. He said according to his dad and family pictures and their family bible, his grandfather was Italian. His results was 97% Ethiopian/Eritrean and 3% Somali. According to Ancestry, I was the one with Italian DNA with 2%.

This ancestry DNA is not accurate. People 100% from one Africa region is told that they have Asia nor European blood. Africa is the origin of all humans on earth. Africans, especially east African origins, probably exhibit/posses the DNA of all other humans who originated and migrated from this region to other parts of the world.
