Andhra Style Spicy Egg Curry | Andhra Chilli Egg Curry Restaurant Style
Andhra cuisine is popular for hot and spicy foods and especially the foods made in Guntur region. Guntur, a small town in Andhra Pradesh is well known for its fiery hot and spicy foods.
This spicy and hot simple Andhra Egg Curry recipe is a gravy that is cooked with minimum ingredients in many households. The secret to this curry is the perfect masala base, which adds a magical touch to this curry. An artfully blended ground paste that releases plenty of flavours to form a nice strong curry is the trick here. It is pungent yet pleasing to the senses.
Do take heed - this palatal joy may be followed by a runny nose and watery eyes.
P.S : Reduce the green chillies if you cannot tolerate the spice level.
Ingredients :
6 to 7 Boiled Eggs (slit given on each side)
For the Masala Paste :
2 tbsp Sunflower Oil
40 gms Onion (roughly chopped)
8 nos. Green Chillies (slitted)
1 cup Coriander Leaves (roughly chopped)
A handful of Mint Leaves (Pudina)
1 sprig Curry Leaves
¾ cup Fresh Grated Coconut
30ml Water
Other Ingredients :
3 tbsp Sunflower Oil
2 sticks Cinnamon
2 nos. Cardamoms
½ tsp Cumin Seeds (Jeera)
½ tsp Fennel Seeds (saunf)
2 large (200 gms) Onions (chopped)
1 tbsp Ginger (chopped)
2 tbsp Garlic (chopped)
4 nos. Green Chillies (slightly slit)
2 small (100 gms) Tomatoes (sliced)
½ tsp Salt (or as per taste)
1 sprig Curry Leaves
½ tsp Turmeric Powder
1 tsp Red Chilli Powder
3 tsp Coriander Powder
200 ml Water (to be used after rinsing the blender jar)
1 tsp Garam Masala Powder
300 ml Water
Few Coriander Leaves (chopped)x
Note : tsp is teaspoon
tbsp is tablespoon
