As a user of Electrolux assistent since about 30 years i can recommend to put some vegetable oil in the hole of the roller and back at the swinger arm nut aswell to the knife. Good demonstration.

Six years later and this is still the best video covering the Ankarsrum out there. Really wish Lynn had a more videos because she clearly gives the details that so many appreciate. I've been looking to replace my KA for a while since the motor is on its last leg and cannot handle more than a kilo of dough at a time and this review was enough to put me at ease with the price tag and order one. As everyone else says....this is the BEST demonstration video for the Ankarsrum Assistent! (I wish it didn't cut off partway through the meat grinder demo though). I've been agonizing over whether or not it's worth the cost to buy now vs waiting for my 6 qt KA pro to die (it's still running strong...so it could be a while). This demo seals the deal for me. I'm going to sell the KA while it still has life in it, and use that to offset the cost of the Ankarsrum and several attachments.

I'll echo many people here...this is one of the best videos on what the Ankarsrum can do. You show MANY uses which answer a lot of questions that at least I had: (1) can you do a small batch of dough instead of multi loaf - YES; (2) can you use the SS bowl to make cookies instead of the bowl/whips - YES; (3) what's the difference between using the roller vs. hook - gentle kneading vs. ripping. I could go on, but you get the idea. I do wish I could get the recipe for that herbed cheese bread as it looks amazing but it is helpful to see all the variations you can do with this machine. I've watched this video at least 3 times and will continue to come back to it as a reference / confidence builder anytime I have questions on what something should look like. THANK YOU!!!

I want that recipe, too! And incidentally, the roller and scraper do a FABULOUS job of creaming butter. I only use the plastic bowl if I have someone taking something out of the S/S bowl and want to get started on something runny-ish, like a glaze.

I have just bought a Ankarsrum Assitant and this vid helped me a lot because it is different then other mixers. I owned a Bosh for about 6 months and I just had some issues with it, like dry pockets of flour wether it was bread or cookies. It also had a lot more to clean. Already I like this mixer better. This vid was the best one I could find. I may get more attachments b/c Lynn was so good demonstrating.

Lynn, you did a fantastic job with the explanation of the mixer. When I research for videos to help me decide on a purchase, I always look for this type of video that is not “professionally made” (by some you tubers standards) but it is honest and shows enough details and explanations to help. This video convinced me to purchase the mixer vs. the Kitchen Aid. It is by far the best video on the use of the machine and the accessories.

"Professional" is usually appliance-manufacturer Newspeak to sucker people who think they need COMMERCIAL equipment. While it's true that commercial equipment tends to be more robust, it's usually not necessary, or even optimal, for home use (in addition, it invariably carries NSF certification). KitchenAid used to manufacture very fine machines but even at their best, they wouldn't have been able to knead large batches of bread dough, much less smaller-recipe whole grain dough.

I bought mine in 1990; thousands of loaves later of 100% w.w. bread, and I still prefer the dough hook. The hoopla about the 'tearing' of the dough is obviously made by people who have never seen commercial spiral or fork kneading. Just a terrific and very different mixer.

I think it is a good idea to start your bread dough with the roller! If you start with the hook, as I did at first, the machine will just wind the dough around the hook and not much happens....The roller seems to be the most versatile attachment to the machine.

Sold. I had a KitchenAid for 15 years loved it...had to buy a new one :-( After 2 years of the same use and I upgraded to a professional model it broke, right after the warranty expired. I make a lot of bread, and Brioche so I am willing to pay the price to have something that will last me another 15 to 20 years.

I have just received it today it looks fantastic..I ordered Black but it is not Black it is like DIMGRAY it looks even better. It came with a recipes book for Bread, Cakes and Smoothies.......It looks beautiful and solid and it is made in Sweden :) I bought it with grain Mill package. I am looking forward to try it heavily the coming 2 weeks and I will let you know :)

Soon after adding the yeast, around 4:30, did you increase the speed? You didn't say so, but the motor sound changes, and again at 6:20.

It's going to be a while before I can afford this but I'm now convinced that this is the mixer I want! Thank you for the thorough demonstration! I'm curious how the flour mill attachment compares to the Komo mill you have in the background. I'm sure the attachment is a great value and probably one I would buy, but I'd like to know if that beautiful mill is something I should aspire to after I buy my Ankarsrum.

There's an online group for mixer owners and some of our members have KoMo mills. I hasten to add that most of us also own Ankarsrums, Bosches, or both. And I agree: this is an excellent demo. As I review and compare several of the pricer and high quality home mixers, I have found this video though posted 4.5 years ago, to be the most thorough by far! It shows multiple uses, adjustments, and personal hints while being well documented in the video while being easy to hear and understand as well. THANK YOU (I'm seeing only a clear flimsier looking plastic bowl with the current models; is your white one a replacement or just what used to come with the mixer?)

I have owned 2 KitchenAid mixers since Christmas of 1955. My present one just started mixing with just high speed. So I started looking on line for a replacement when I came across the Ankarsrum! I have been watching several videos on it! Am impressed with it! I don’t make bread very often, mostly cakes and brownies. Was wondering if it would be a wise investment for me?

I have an old machine called a "Ballerup Mastermixer" It´s a Danish machine from the early 80s and still going strong.. It´s the exact same model with the exact same bowl and accessories but with an older design til the botten leyout. Mine comes with a meatgrinder too but only the stainless bowl. I think the plastic with the whipper thing is something new. :D It says "made in Denmark 1981" in the buttom. i belive the design was sold to Electrolux, but i am not sure..

HI Sheila, I ground Saskatchewan Grown Hard Red Spring wheat but have done many other grains as well. As for how much wheat gluten I suggest you look elsewhere for that info especially related to the bran/gluten relationship. I love baking bread but am no expert when it comes to that. Trust me many dogs have been fattened up with my flops...lol

Love this video, watched it more than once! My Ank arrived 3 days ago, beautiful orange color. I know there will be a learning curve as I’m using to primarily hand mixing sourdough bread dough. This video has helped a lot, though most YT videos are yeasted breads, not sourdough. I am determined to master it and hope I get the hang of it soon. Superior machine!

Thank you this was very useful, particuraly the extra time you spent showing off the various attachments. One question if you don't mind. Can it take even smaller quantities if dough, say 2 cups worth? Its not a big issue if it can't, as I'm just used to making that size of pizza dough for my wife's pizza base on our Kenwood Prospero, as it can't handle making the dough for mine, the wife's and my boys pizza bases in 1 batch and it means I need to make 3 batches (2x500g/2x4cups and 1x250g/2 cups). I'm looking at this machine as I want to make just one batch, but curiosity being what is, I still want to know if it can do a 250g batch of dough or not using the roller?

Hello, this is actually the light creme mixer in the video and the color remains. We have been distributing ffor over 12 years and have never had an issuse with anyone contacting us that the white unit did not stay white.

Lynn, This was very helpful. Can you advise about adding ingredients by weight? I currently place a KA mixer on the scale, and tare ingredients as I go. Because I bake a great many loaves of bread at a time AND use sticky ingredients (like honey and sourdough starter), I don't want to weigh them in separate containers.The Assistent's bowl is so heavy, and the need for it to be going while flour gets added makes me wonder how to adjust.

Weigh your flour and starter in advance in (sorry) separate receptacles, then (and this is where a scale that can handle a lot of weight comes in handy), weigh all of your liquids--including fats, sweeteners, eggs, salt, dough conditioner--into the Ank's bowl, then start Lynn's procedure. Add half the flour, then the starter or yeast, then keep adding flour like Lynn does until you get the "doughnut." Bear in mind that, due to ambient humidity levels, you might not use all the flour your recipe calls for. Dough that looks "loose" or "shaggy" after its knead and rise is normal--take it out and fold it a few times on a lightly floured surface. I promise it'll come together to what you think dough should be! The few adjustments I mentioned may take a little getting used to but once they become routine, you won't find them problematic. The Ankarsrum handles bread dough MUCH better than a KA, and in larger amounts, too.

Can I ask, if you use the Ankarsrum for bread dough, can the dough just rise once in the loaf tin before baking...or does it have to rise twice please? x

Yes, once is ok. If you listen, she say she usually just does it once. My Electrolux Assistant (same machine - is some 20-yrs old now) and I have never let it rissen twice, This video, though, have made me feel to try the dough-hook again. Which I never understand the meaning of. The dough just roll around. Think I´ll try it again someday. But I guess, you got one.... What I youre feeling about it, compared to our other/past/old-machine?

I see you have a Nutrimill grain grinder...is it a good buy or is it better to buy the Ankarsrum attachments...or is their a different product you like???

Hi Sam, No that is not a Nutrimill, it is a KoMo Mill. I use both the Ankarsrum Mill attachment and the KoMo at times. Both are great, if you have an Ankarsrum Mixer the attachment is wonderful but does not grind quite as fine as the KoMo.

Really nice video!! Just one comment: You have to use the scaper with the dough hook! They are designed to be used both at the same time for the best result!

I got the Bosch UMP and I fully regret the decision. I was debating between the Bosch and Ankarsrum but went with the Bosch the save money. With the Bosch, it cannot handle small batches at all, the accessories are insanely brittle plastic and constantly break even mixing light batters, you have to use 3 different accessories in most batches, it's a pain in the ass to get stuff out of the bowl (heavy and a huge center column to work around), it's insanely loud (around 100 DBs mixing on medium speed), and almost nothing on it is dishwasher safe. Bosch really went the cheapest route in making these while still charging premium prices. Save yourself the pain and just go with the Ankarsrum.

How is this with making cake batter? I'm so fond of how the kitchen aid creams butter, but mine is TERRIBLE with dough. Really want something that can still do both though.

You can absolutely make cake batter in either bowl. I almost never use the plastic bowl.
