He kinda gives it in the video. 1900g milk. 2700g flour. About 70%

I have one and its a piece of junk for making bread dough were you require a strong gluten development or hydration above 62%. Spiral hooks are by far the best designs, such as the one of the Famag.

Probably true. Spiral mixers and pizza dough are like an excellent marriage, that's why the two have been conjoined for so long both in Italy and America. However, I have the Ankarsrum and if you have the patience and the willingness to give it a chance after the learning curve, it does a very good job with bread and pizza doughs (although I'm not sure what the big difference between the two is). The other plus is that it's useful for several different things whereas a spiral mixer is good for one.

Überzeugt mich nicht. Kneten ist etwas anderes und auch hier wandert der Teig am Haken hoch - da gefällt mir sogar die KitchenAid noch besser, aber es wird für diese Teige doch ein spiralkneter
