In autumn it is impossible not to enjoy the richness and variety of Polish apples. Therefore, today we have prepared for you the promised recipe for another apple pie. Such a one has not yet been in our vegan and gluten-free collection.

Time: 60 minutes + cooling time
Quantity: 8-10 servings
Ingredients - bottom:
1/2 cup potato flour
1/4 cup rice flour
1/4 cup cane sugar
1 and 1/2 tablespoons of ground flaxseed
1 tsp corn flour
1 tsp chickpea flour
1/2 teaspoon soda
50 ml sunflower oil
50 ml coconut milk
50 ml water
Ingredients - mixture of apples:
1 and 1/2 kg of apples
1/4 cup sugar
50 ml of lemon juice
50 ml of water
3 teaspoons agar agar
Whipped cream:
500 ml of cooled coconut milk
5 tablespoons instant rice gruel
3 tablespoons powdered cane sugar
Method of preparation:
Mix the dry ingredients for the bottom of the cake together in a bowl, pour in the oil and mash it between your fingers so that it is greasy. Then pour in the coconut milk and water and mix with a spoon until a smooth loose dough forms. Set it aside to thicken.
Meanwhile, peel the apples, deprive them of their seed nests and cut them into small slices.
Spread the dough on the bottom of an oiled cake pan, prick it with a fork and bake in an oven set at 180°C with thermo-regulation for 25 minutes.
Put the sliced apples into a pot along with the sugar and cook, stirring all the time, until softened.
Mix agar with water and lemon juice, pour into the pot with apples and cook for another 3 minutes stirring all the time.
Take the baked cake out of the oven and spread the apple mixture on it, which is evened out, and put it in a cool place so that the apples set and the cake is cool.
Meanwhile, using a blender, whip the coconut milk, and once it is thick, add powdered sugar to it and mix again. To make the whipped cream stable we add instant rice gruel to it, mix, set aside for a minute to let the gruel absorb the moisture and mix one last time.
We put the whipped cream mixture on the cooled cake, which we carefully level and put it in the refrigerator for a little more, so that it is cool and stable.
Take the cake out of the refrigerator. We separate its edge with a knife from the rim, which we then remove and we can proceed to cut the cake and, of course, eat it.
