These pastries are super flaky and sooo delicious. They’re the perfect recipe for breakfast, brunch, or even dessert!
INGREDIENTS:
4-5 Honeycrisp Apples, peeled and diced
2 sheets of puff pastry, thawed
1/3 cup of light brown sugar (+ 2 tbs of dark brown if desired)
1/4 cup of granulated sugar
2 tsp of cinnamon
A dash of nutmeg
2 tbs of butter
A squeeze of fresh lemon juice (about a tsp)
1 tsp of vanilla
1 tbs of cornstarch + 1 tbs of water
Cinnamon and sugar, combined (for garnish if desired)
Powdered sugar + heavy cream + vanilla (for glaze if desired)
INSTRUCTIONS:
1. Remove puff pastry from freezer and allow it to thaw.
2. Clean, peel and dice your apples
3. In a skillet over medium heat, melt butter then add your apples. Stir until apples are coated in butter.
4. Add both sugars, cinnamon, and nutmeg then stir. Simmer until apples soften and sugar melts down and creates a syrup, stirring occasionally. (About 7-10 minutes)
5. Add in your lemon juice and stir. Then add in your cornstarch slurry and mix until well combined and sauce has thickened slightly.
6. Turn off the heat and stir in a splash of vanilla extract. Set your mixture to the side to cool slightly while you prep your puff pastry.
7. Preheat your oven to 400 degrees. Grab your puff pastry and cut it into 6 squares. Roll the puff pastry squares out slightly to help even out the sides.
8. Add a spoonful of apple filling to the center of your square. Fold it over and crimp the edges with a fork. Cut 2 small slits in the top, then place them on your baking sheet.
9. After you’ve assembled all your turnovers, coat each one in your egg wash mixture. Now is a good time to sprinkle on cinnamon sugar if desired.
10. Bake for 15-20 minutes or until turnovers are puffy and golden brown.
11. Finally drizzle on glaze if desired.
