INGREDIENTS: 4 1/2 cups-5 cups fresh finely chopped apricots, 1 cup granulated sugar, 1/4 tsp to 1/2 tsp cinnamon, 1/4 cup all purpose flour, 1-2 tsp fresh squeezed lemon juice, 1 tsp sugar for topping, lite cinnamon. 1 egg beaten with 1/4 tsp water beaten in egg for brushing top crust with egg wash.
INSTRUCTIONS: Chop 4 1/2 to 5 cups of fresh apricots finely, mix in with all dry ingredients and lemon juice. Fill bottom pie crust. Top with second layer of pie crust, brush with egg wash sprinkle sugar and cinnamon on top. Make 4-6 slits in center of pie for ventilation. Place foil around edge of crust. Bake 35-45 minutes in 425•F preheated oven. ( in gas oven 400•F)
Cool 2 hours ENJOY 😊 SERVE WITH VANILLA ICE CREAM
MY HOMEMADE DOUBLE PIE CRUST RECIPE: ( for 9”-10” 2 crust pie) 2 2/3 cup all-purpose flour, 1/2 tsp salt, 1 cup softened butter, 8 tbsp cold water

It is so nice to be able to have friends in your area that are farmers. You and your son have had a lot fun time together over the past couple of weeks harvesting some great seasonal fruit. I always enjoy watching your videos. The apricots look very large, tasty and ripe. Thank you for showing us this amazing recipe. The finished product looks wonderful. Yes, we picked more than we needed. Brought Mom & Dan some and jam. Gene picked some too. Made 7 apricot pies today!! 7 for Isaac’s Lions club dinner and 1 for us. Then an 8th pie for 4th of July video 😀

Yes they are!! Mom will be having some tomorrow when I visit 😀I’m bringing cherries 🍒 too. They r both in refrigerator keeping cool and fresh!!! I know how much she loves both cherries 🍒 and apricots so I can’t not bring them to her!!!

Here in Minnesota, we don't get much of a choice of fresh fruits from a tree. The pie looks so yummy!

Thanks 😊 Yes, it’s a plus to have friendships with fresh fruits ! We live in the middle of orchards and agriculture. Lots of nuts and fruits and vineyards. I don’t take them for granted. I froze a lot. Tomorrow I go to my Moms to bring her cherries 🍒 & apricots, her favorites.
