my ultimate chai recipe
1 3/4 cups water (410 mls)
3 green cardamom pods (crushed)
1" piece ginger (washed and smashed)
3 cloves
1" piece cinnamon stick (1/3 cinnamon stick from supermarket spices)
1 whole star anise
1/2 tsp demerera sugar (raw sugar)
bring to rapid boil and high simmer for 3 minutes
1 1/2 tsp loose black tea (or 2 teabags) on lowest heat for 3 minutes
good splash of milk (around 3-4 tbsp or until caramel brown color)
bring back up to boil, strain and serve
