This isn't really a recipe. To make a fruit syrup, put some fruit in a pot with a little water and boil it until it's starting to fall apart. Strain it through a sieve, discard the solids and rinse out the pan. Return the juice the pan and combine with up to an equal quantity of sugar. (Be conservative - you can add more later after you taste it.) Boil until the sugar is dissolved and the bubbles start to stack up on each other. Cool and taste. Add more sugar if it needs it, and maybe extra acidity, such as lime juice or balsamic vinegar. Let cool before pouring on ice, which I would pulverize with a blender, or scrape from a wide, frozen pan of water with a large steel chisel. Of you could buy an ice shaving machine.

A word of warning: When using a chisel, NEVER have the hand that isn’t holding the chisel in front of the blade. I nearly cut one of my fingers off in a woodworking accident. Expensive surgery and months of physical therapy saved my finger, but you can avoid that by always keeping the hand that’s not holding the chisel behind the blade.

Glad you're OK, but I will say, I don't think this is much of a concern when shaving ice for a dessert like this. You simply aren't pushing with very much force, like you would be when chiseling wood. The kind of force it would take to really damage your hand would carve deep into the ice and produce big, jagged chunks. To get delicate flakes, all you're doing it skating across the surface.

Adam Ragusea right, but a sharp chisel will slice right through skin/tendons just like a sharp kitchen knife will with little pressure. I don’t mean this as a negative comment, just wanted to offer some advice for those who haven’t yet learned to respect sharp blades. I actually just put a pan of water in the freezer!

If you ever want a clear liquid that can freeze well enough and has a taste unlike water, you could always use lemonade or limeade; usually see through and makes for a really good ice base imo.

My dad uses shaved ice for Halo-halo(using an ice shaver) which is cool. The problem is it all melts into pure water in 5 minutes with the heat. Like, water, not even just slush.

Just a tiny bit of Advice: If you want to avoid your kitchen from looking like a Murder Scene after removing the seedpots from a pomegranate, slice the outer skin along the bumps and segment it into 5 parts, then remove the seedpots underwater, in a large bowl or your sink. That'll leave most Seeds intact and prevent juice flying everywhere.

Update: We picked blackberries together today and made the syrup together today (as much of the process I'd let a 5 year old help with) and tomorrow she wants pancakes with our special home made syrup that's super yummy. Thanks a lot Adam, you made my daughters weekend, she really had a blast.

The chisel gives you the best "shaved ice" texture in my opinion. Very different texture to snow cones and slushies which are generally more coarse. I know snow cones sometimes come super fine like snow, but they mostly come coarse. Shaved ice is the way to go :)

Mom used to do this with actual snow - always on the second day of a major snowstorm (she said the first day's snow washed the pollution out of the air). Called it "Snow Cream" and usually made it with vanilla, cream and sugar.

Fun Korean note! the “pat” in patbingsoo refers to the red beans (also known as adzuki beans?) as a topping. “Bingsoo” is the generic term for the shaved ice dessert, and regardless of toppings they are SO refreshing to have in the summer! The ice is also shaved WAY finer than any crushed ice dessert I’ve ever had in America. Common toppings aside from the mentioned red bean, fruit, and condensed milk, include ice cream, syrups like chocolate or green tea or even coffee, mochi rice cakes, ... literally anything. I got a tiramisu bingsoo once and it came with a little slice of tiramisu on top, so cute XD

In Korea we also put condensed milk on the bingsoo because shaved ice with toppings kinda goes bland after you eat all toppings condensed milk prevents that. Fun fact: the condensed milk comes in shot glasses sometimes

Little tip on getting the little fruits out of pomegranates: Just cut the fruit in half, turn it upside down, and bash it with a wooden spoon. The little fruits are gonna fall out and you can then eat them or use for garnish or for syrup. Make sure you do it over a bowl though. Also, the seeds are perfectly edible. They're a great source of nutrients.

Seeds can become lodged in the folds and contours of the gut and spark an inflammatory response which for most people is no biggie, but in my case can spiral out of control so much that it can severely damage the intestines and cause all kinds of other problems. The gut can become so extensively inflamed that it literally burns holes through itself and causes huge amounts of bleeding & overall suffering, potentially even sepsis/death from a bowel perforation. A couple years ago I had to have multiple blood transfusions because I had lost so much blood during a flare up, I remember sitting on the toilet thinking I had diarrhea but I looked down and it was actually just massive amounts of pure blood pouring into the toilet... Somehow I drove myself to the hospital, not sure that was the best idea considering how dizzy i was from that blood loss.... but I made it! I was in the hospital for several weeks and ended up getting sepsis too (bacteria in your bloodstream, really bad, high chance of death) but I got blasted with huge doses of antibiotics and turned out ok, although the antibiotic vancomycin fucked up my kidneys so badly that i was in stage 3b acute renal failure and felt like I was literally dying, thankfully I stopped the antibiotic and my kidneys healed completely, but still.......... not terribly common for a 22 year old guy to experience Seeds were definitely not the cause of all that, but they are one of many things that I don't dare eat since they are irritants capable of spiraling things out of control. So yeah, i'll be avoiding them... edit: other than my gut im a 100% normal dude btw like I just finished grad school and got my masters last month!! No one would ever know I have this condition unless I told them.

6:00 did you know pomegranate seeds are actually completely edible and are a great source of fibre. They take a bit of getting used to to swallow whole but once you get past that they give a great crunch that compliments the flavour 👍

@@Sean-Ax , same. As a teen, we moved to rural central Florida, and a nearby town known for its raw seafood market treated blue crabs as trash fish/bait. My 9th ward mother was very amused by that, and our gumbo was super inexpensive.

Real talk, can confirm it smells good, and not in a sickly way like a lot of cheap deoderant and colognes tend to, but before you shell out money for refills, hit up your local thrift store and see if they have any. Several of the ones around me had plenty trial packs on offer for super cheap.

To easier get stuff out of the pomegranate, cut the top so you can see the ridges that hold the seeds, cut through the skin along these ridges and open the fruit along the clefts you have created. Very easy to dig the seeds or just chew them off :)

hey Adam, here's a tip for eating pomegranates : chop it in half,take one half and use a heavy spoon to wack the top of the pomegranate on top of a bowl. By using this method there'll be almost no white structure things falling into the bowl

I’m Finnish and schools teach us both US & British English. My textbooks say rubbish bin in BE and trash can in AE. I’m assuming both are correct, but i’m also not an English major.

i mean, "conservative" isn't a hard quantity. it depends on the context. a "conservative" amount of sugar in a syrup still needs to be a lot of sugar, because syrup is mostly sugar.

I recommend to freeze a giant container of water and grating the ice like cheese with a grater actually. I’ve found it this method to work pretty nice.

Hey Adam! I do something similar all to this all the time! However, I recommend you just put a pot of water in the freezer and just stir it every 15-30 minutes to get shaved ice. Its soo much quicker. You can also do this with a sugar water that's flavored with lemon for a simpler treat!

I grew up with this but man, Halo-Halo is really the BEST “shaved ice”-based dessert, snow cones are like ones you either make at home or sell during the summer time, it’s really easy to make but halo-halo is like a dessert that you too can also make at home but the restaurant/shop version will always be 100 times better.

For pomegranate, my aunt in Vietnam did it the best way. Cut the fruit in half, press on outsdie a bit, and then hit the outside with a spoon, the pomegrenate seeds fall right out. Personally, my favorite way to eat them is to straight eat the whole seeds like cereal and just swallow the seeds.
