HEats up the Puck screen and helps further with distribution of water - although does also speed the shot up somewhat

Love the combination of Normcore tools like the WDT, magnetic dosing funnel, mirror and spring tamper. I have all of these and use them daily. I do question the need for OCD type distribution alongside WDT. I've always looked at them being competing distribution methods with WDT being superior and by a long way.

Yeah me too 👍 is it absolutely necessary? My pucks after WDT always looks so fresh and clean anyhow. And a good tap on the bench, then remove the dosing ring - it's usually ideal then to tamp sans distributor. I do highly recommend a WDT tool over a Distributor in any scenario other than commercial outlets.

Thanks to you and some other professionals around the globe, im waiting for a delivery... Flair 58 +, Varia Vs3 and the all stuff. Im looking forward to this zen coffee routine. But paper filter on the bottom, i has to try. Doing this don't reduce the oil, and so, the crema ?

I have the same set-up with the Varia VS3 (ver. 2) and the Flair 58+. What grind setting did you go with? I've gone between 2 & 3 and my coffee is still tasting acidic. My heat setting on the Flair is either on the 2 or 3 level. I pre-infuse for 13 seconds at 3 bar and slowly ramp up to 9 until I reach 36 grams (I'm using 18 grams of beans). Any help or a point to the right direction would be appreciated as I'm fairly new to the world of espresso. Thank you thank you!

Nice setup! I’ve gone with a 3 in most cases with the Flair 58 - occasionally dropping it to 2 is the flow is too fast. Just ensure you’re not having to lean on the lever too much to achieve the 9 bars. The right amount is some effort, but not excessive - and you can get a good flow rate without it stalling. In terms of temperature- As long as your using boiling water as your brew water along with the pre-heat - there’s not too much more you can do here - I would suggest always using the 3 setting on the pre-heating if you want to avoid acidity in most cases. Hotter the better for this. I would suggest a shortened pre-infusion - maybe where you hold down the lever until you get the full bottom of the basket covered - avoiding the donut extraction - then go straight to 9 bar rather than slowly - and hold it to get your full yield - and let it drop naturally. I’m usually extracting a yield of around 50-55g of espresso - but if too weak - or burnt back off to 45g 🙏 let me know how you go

@@AlternativeBrewing thank you thank you for the advice! I went with a 3 grind with full heat and pulled a 52-53 g cup and followed your directions regarding the pull and infusion time(s). The cup was definitely not as acidic but there was just a small lingering amount to it. I'll play around with the grind settings some more but not going to go above a 3 since the flow goes too quickly. At least it's now going in the right direction versus getting more sour. 🙌 Thank you thank you again!

🫣 hahaha you got me! thb though - i rarely weight out on manual espresso - idk why - other than usually it's because there's a maximum output anyway - around 50-60ml. With auto-machines is much easier to blow that ratio way out - but with something like the Flair - I don't risking a little longer ratio - especially since - i take in to account - it's usually a little more under - then over extracted - so a longer contact time - more water through - I'm always happy with the output 😀
