This video features cornbread as my mom and grandmother used to make it. It's super simple and cheap to make.
Mom's Cornbread:
2 cups self-rising cornmeal mix (NOT plain cornmeal)
2 eggs
2 tsp. vegetable oil (or whatever you have)
1/4 cup vegetable oil for cast iron frying pan
1 3/4 cups buttermilk or regular milk
Preheat oven to 400F. If using a cast iron skillet, add 1/4 cup to the skillet and heat it on a burner until very hot. Mix all above ingredients. Add a little bit to the hot oil in the skillet. If it sizzles immediately, it's ready, and you can pour in the batter. Bake for 20-25 minutes or until golden brown and set.
Any other pan - use nonstick cooking spray on it before adding the batter.
