You threw away my favourite part of the parasoll mushroom 😆. I always eat the ring raw. It has loads of flavour and a very nice texture. You are right in not cooking it, because it would just disappear, but next time just shove it in your mouth while picking the mushroom. It's a very nice little treat. The parasoll mushroom is my overall favourite mushroom. I just fry the flat caps whole in butter and cut it into "pizzaslices" at the table. I love both the flavour and the texture of them. Very delicate as you said 👍

When I picked parasol mushrooms with my parents we'd just dip the whole head in milk and egg mixture, cover them in breadcrumbs and fry them like a steak or a fillet. I highly recommend that for the ones that had a chance to open their parasol fully.

In the 50s, my Grandad was out picking mushrooms in rural Leicestershire, he would have been 12 ish. While he was out tramping, a police car pulled up and two coppers asked what he was doing. "Picking mushrooms" he told them honestly. The got out, collected him and put him into the back of their car. One swift clip around the earhole later: "Don't lie to us, you're the one who's been stealing chickens!" They thought, at that time, no one in their right mind would use a sack to pick mushrooms as a basket was the only sensible way to carry them. He pled his case in the back of their car as his mum was using the basket at the time tending to her allotment and that he had no choice but to use the sack that they normally used for fruit picking. They did eventually let him go but from hearing that story at a young age, I've understood it to be taboo to pick mushrooms using anything other than a wicker basket

It's truly been an exceptional year for Penny Buns where I live too (Scotland). Never seen a crop like it. I carry mine in a backpack and have filled it about 5 times so far, while still leaving plenty to age and spore. Of course, we get the same chew marks on the caps and on some of the stems too, but I trim them all off, just in case they are the result of mice (which poop and pee everywhere). I usually dry my mushrooms and pack them into jars. But this year I'm pre-cooking them with salt, soy sauce and stock cubes (Oxo 'vegan' beef and chicken flavour) and then freezing them in 2 litre ex- ice cream tubs. I've also turned some of the Penny Buns into mushroom pate as well (because I'm not going to pay nearly £3 for a teeny-weeny little tub of mushroom pate any more). Penny Buns make great pate and, with a bit of the above flavouring, plus smoked paprika and cornstarch for thickening, taste exactly like the supermarket stuff. I remove the pores from the mushrooms beforehand as these made it a bit slushy. I have started to pick a few Russulas that I'm absolutely certain of now. The one called Charcoal Burner occurs occasionally in local woodlands, and there are some nice yellow ones about. I did nibble at one of the really dark purple red ones - and it really is as hot as the books warn. I'll not be doing that again. We've had less in the way of Hen/Chicken-of-the-woods, Chanterelles, Stump Puffballs and Beefsteak Fungus this year, which the family really like. So I think the dry weather might have affected all of those. However, there's promise of a very exceptional crop of Wood Hedgehogs just emerging, whole troupes of them, which I have never seen before. Looking forward to those! I can well understand the wariness around the Amanita family. We have loads around here, and I have eaten a False Death Cap once (by accident - and that really shook me up once I went through the identification book yet again, and realised my mistake). It was delicious, by the way, like roasted chestnuts! We see lots of The Blusher, Griselles, False Death Cap (obviously) but also a heck of a lot of all the nasties. I do pick the Fly Agaric from time to time and place pieces of the caps around Birch trees in my garden together with kitchen scraps from the Penny Buns. This is because some mycologists are beginning to suspect they might have some sort of mutual relationship, since they are often found growing together in the wild. I do have one successful Fly Agaric/Birch Bolete pairing around my oldest Birch (15 years old), and I have other Boletes growing around other Birch trees (the Fly Agaric taking longer to start fruiting).

Because of you, I'm now being quite mindful whilst out and about. For the first time in my life, I've spent the year looking around spotting forageable plants, fruits, and mushrooms. I've been careful with the mushroom side of things, and have only picked for consumption, the very common agaricus mushrooms. That said, I've furnished myself with a couple of good reference books with good clear photos. Rubescens is a pretty good amanita to start with if you’re apprehensive about the genus, it can only really be confused with the panther cap, but the red blushing distinguishes it quite easily. That mushroom and meatball mixture looked really tasty all on its own. Reminded me of a leek and meatball soup I made once, which was hands down the tastiest thing I ever made. Never made it again because it was a tad on the expensive side and a lot of work, but it was delicious. Maybe I'll make a pasta like that soon, might be good for reheated meals when I'm on campus all day.

The only drawback with the basket is that I end up having to explain my finds to curious people on my way back

What an amazingly spectacular basket of mushrooms. I've never seen a basket of mushrooms like that. I've never even seen a basket of mushrooms. We've lived a good distance from rural, semi rural, or undeveloped land a while now, but I never saw such huge mushrooms as plentiful and so absolutely beautiful as those anywhere around where I come from. The largest I've seen are chanterelles, but it's very dry, unless you're along a river or creek of which there are few. I would guess by the sound of it I'm not the only one who's never seen a basket of mushrooms. At least I get why a basket is perfect for delicate foods and flowers or other specimens and stuff. Wow, all the lush mosses and the pretty ferns all over the place are just so beautiful. The dog is a crackup, playing with her own rock. I wonder what she'd do if she hit a truffle while digging furiously burying and unburying her rock.🤔😄 That must've been delicious!!!

The meatballs and mushroom sauce look absolutely delicious! Just a hint for making the sauce. Once you've cooked your butter and flour roux, take the pan off the heat and add your liquid a little at a time, stirring constantly. Once all the liquid is encorporated, return the pan to the heat. You'll have a velvety smooth sauce this way and no lumps.

For keeping your mushrooms dry, silica gel is not really ideal, since unless it has been freshly regenerated (by heating in the oven to over 200 degrees C for several hours), the rate of moisture absorption is actually quite low - and even when it is fresh, the rate of absorption starts out fairly high but drops off exponentially. A much better drying agent to use is calcium chloride, since it has a high rate of moisture absorption which remains consistent, and even when it has absorbed enough moisture to dissolve itself, it will still continue absorbing more, albeit at a slightly reduced rate. Plus it is non-toxic, or at least no more toxic than ordinary table salt. Anyway, I would recommend wrapping a few spoonfuls of calcium chloride crystals in some tissue or kitchen roll, secure with a rubber band, and put the parcel into that little receptacle in the jar lid. Provided the lid still makes a reasonably airtight seal, it will keep your dried mushrooms dry almost indefinitely. You can also use the same stuff for drying out small quantities of mushrooms (thinly sliced) or herbs: Put about 1 cm depth of crystals into the bottom of a large jam jar, add a scrunched up wad of tissue paper on top to act as a spacer, and then a few more layers of kitchen roll on top of that. Fill the rest of the space loosely with the material to be dried, and screw the lid on tight. This should absorb all the moisture from the mushroom or plant material in a few weeks (possibly less), without using any heat or power at all. Unlike silica gel, the calcium chloride crystals are not easily regenerated since it requires heating to over 600 degrees C to completely drive all the water back off. So it's much more cost-effective to just use them until they dissolve themselves in the moisture they absorb (this is a property known as deliquescence), and then wash them down the sink. They are so cheap that this really isn't a problem.

Silica gel works fine. It is not required to absorb damp like a room dehumidifier.

I was taken mushroom foraging in the New Forest for the first time when I was around 12. I was somewhat mushroom-averse at the time, but after trying the chanterelles, hedgehog fungus and ceps that we found, I discovered that I actually really like them. I'm far from an expert but there are a fair few I'm confident in identifying, and always keep my eyes open during a walk in the woods for tasty treats! Black trumpets are my favourite, but they're really difficult to spot.

As many years I've been wild foraging for and for as many guided talks, walks or videos and vlogs i watch on mushrooms, they are definitely the one thing i still can't trust myself to pick. Great video Mr Shrimp. Nature certainly is bountiful. I still myself have apples growing from my garden tree that are too high to pick.
