Congrats John that's amazing! My wife and I were turned away at the door because the festival was at maximum capacity, but we will make it back up to Austin soon to see you guys.

Can you substitute lime juice for the vinegar when fermentation? We're not the biggest fans of vinegar so if we could do that we'd live to know

as long as your PH is low enough you don't have to add any vinegar. Make sure your fermentation reaches around 3.7 or lower with a PH meter - takes about 2 weeks

Quick question, unrelated to the video. If some of your onion cap keeps floating above the brine of your ferment, will that hurt it at all?

I dont have any problems with it .. just make sure that once the fermentation is done you cap the jar

hoping you can answer this question for me, I have an abundance of habanero and I also have Carolina reapers I was going to mix together to make a hot sauce using your fermented method. my question is I don't have all these Chili's fresh at one point. so I know at least 50% need to be fresh but can the other 50% be dehydrated or Frozen and if so which is better dehydrated or Frozen to mix in with the 50% fresh. thank you very much and keep up the great videos

You can absolutely use frozen or dried peppers as long as, as you said, you use fresh peppers and other vegetables as they contain viable bacteria for fermentation
