The rice dish this guy’s talking about is not biryani but kabsa. OFW Pinoys who’ve been in the Middle East and Gulf countries would be familiar with both as it’s served commonly in those parts. Main difference is biryani has a stronger taste because it uses a lot of spices and basmati rice is layered with sauce and meat while kabsa (usually made with basmati rice also) is served side by side with meat (usually chicken or lamb). The chicken preparation in the video, common in the Middle East, is called al shawaya (rotating spit roast) compared to al faham (grilled on coals). Also, Biryani is from India via Mughal Iran while kabsa is originally from Yemen but claimed as the national dish of most Arab countries.
