The Ultimate Keto Pho | Tips To A Clear, Aromatic, And Flavourful Pho Broth | Phở Tái Bò Viên
Serves 8-10
1/2 lb ribeye steak, thinly sliced
1/2 lb boneless beef steak, thinly sliced
1 recipe of Ann’s homemade keto beef balls
8 lbs beef bones* (The more the merrier)
12 quarts water
4 medium onion, divided**
1 large knob ginger, sliced
2 medium or large green daikon (or white daikon/jicama), chopped into chunks (optional)
1 bag (100g) pho spice mix (clove, coriander seed, fennel, cinnamon sticks, star anise, cardamom, licorice)
2 Tbsp sea salt (to taste)
2-3 Tbsp Red boat fish sauce*** (optional, to taste)
Pure monk liquid (a few drops) or powdered allulose (to taste)
4 stalks green onion, divided (green parts thinly sliced; white parts kept whole, about 2-3 inches)
Cilantro, roughly chopped
Bean sprouts
Thai basil
Culantro/Sawtooth Coriander
Lime wedges
Thai chilli peppers
Keto hoisin sauce (optional)
Keto sriracha (optional)

*Traditionally, beef pho broth can be a mix of the following bones: marrow, femur, knuckle, and/or oxtail. I normally use a mix of what is available at the market. If I have a budget in mind, I will mix knuckle and marrow with chicken bones. In this video, I have decided to use knuckle, oxtail and pork bones. There were some talks about it in a couple of my Facebook groups regarding taste and authenticity. I’ve decided to try using pork bones in my pho broth for the first time and have shared my results with you.
**Use 3 medium yellow onion to char for the broth, and thinly slice 1 medium onion for garnish.
***If adding fish sauce directly to the broth, add it just before serving. Or, offer it as a condiment on the table.

is there some importance to having the broth be clear? It feels like a lot of work goes to make it clear, does it affect the taste or is it a tradition?

Oh wow, I cannot wait to make this! Two questions: is it okay to freeze pho broth? And secondly, how do I cook the beef tendon to go in pho? I know how to cook tripe, but I’ve never cooked tendon.

Why did you not add the charred bits of the onion into the broth for deeper color? As for the daikon, doesn't that add an additional non-traditional aroma to the broth? I am curious because daikon broth (which we use as broth base for hot pot) has a distinct aroma and I am curious how that would work with pho.

I don’t like a deeper colour. I’ve added it before and it made it too dark. I prefer to show a golden light colour without using it. I’ve been using daikon for years, even before keto, and my guests never noticed. With the spices, you won’t taste the daikon.

Traditionally, phở broth should be crystal clear and full of flavour from the beef bones and aromatics. This is the way to properly make phở broth. Why? The broth is the most important element for phở. It is what gives the popular soup its distinct character, and it is the first thing people taste to determine if the bowl of phở is authentic or not. It showcases the cook’s ability and dedication to the meal. Although it is not certain how phở came about, it is believed that France had a great influence. In this case, I believe that the soup base for phở was inspired by the same method used by the French to make consommé; a rich, clarified broth simmered over low flames by extracting juices from roasted bones and meat. When making phở, always aim for a clear broth to stay true to its authenticity. If not, impurities will end up in the broth and will make the broth oily and cloudy. A pot of phở broth full of dissolved proteins, minerals and emulsified fat will ruin one’s eating experience.
