Ingredients for a Valencian Paella for 6 people:
- 600 grams of rice
- Half chicken (hind quarters)
- Half a rabbit (can be replaced with duck)
- 500 grams of fresh grated tomato
- 500 grams of flat green beans (bajoqueta or Ferradura)
- 150 grams of Garrofó (Valencian Bean, it is a typical Valencian legume)
- 2 0 3 Artichokes cut into small pieces, (with a little lemon so they don't oxidize) (Optional)
- Extra virgin olive oil
- Sweet paprika 1 or 2 small teaspoons
- Salt to taste
- Water, approximately 1.8 liters plus 2 liters for the broth, total 3.8 liters
- 1 sprig of fresh rosemary
- Already cooked snails (optional)
- Saffron strands (if you don't have it, you can replace it with coloring for paellas)
