Ingredients:
Rice
Brinjal (eggplant)
Vangibath powder
Tamarind
Coconut
Green chilies
Curry leaves
Mustard seeds
Urad dal
Chana dal
Turmeric
Salt
Oil
Instructions:
Cook rice and set it aside.
In a pan, heat oil and add mustard seeds, urad dal, and chana dal.
Add curry leaves, green chilies, and brinjal. Sauté until the brinjal is cooked.
Add turmeric, tamarind, and Vangibath powder. Mix well.
Add the cooked rice and mix everything together.
Garnish with coconut and serve hot.
