Hi, nice video! I thought I had a little bit to add to it, if you don't mind it. I'll be mostly talking about the "necessary animation", basically the opposite of the "unnecessary animation" (wow so surprising xd). Increasing the attack speed will shorten the necessary AA animation that must come through in order for it to not be cancelled. This helps with kiting (e.g. auto attack moving). This is kinda logical since the entire animation gets faster, but I thought it was still worth mentioning as it allows for faster clicking later in the game. There are also certain champions that allow for the minimal time to let an AA come through te be reduced, making the cancellable part of the animation bigger and thus allowing you to kite better/further per aa. Kaisa's E is a great example of this. Because it both increases the attack speed AND actively shortens the time where she can cancel the AA, the necessary animation part gets really short late game and allows for some really smooth kiting.

You missed a few things (not the most important ones, but, here): -There is certain champions that can dodge AAs, Shen and Jax, and there is a champion that makes your AAs miss (same as dodging), Teemo. -Kalista CAN miss AAs on her own, if she loose vision of the target. -AAs are powerful in lane but activates minion aggro, that's one of the reasons of why not all pros uses Attack Speed runes on every champ.
