Ingredients :
unbleached maida- link above 👆(or all purpose flour) : 2 cups(300 gms)
Active dry yeast 1.5 tsp(find link above👆)
Warm Milk 100 ml,warm water 100 ml
Sugar 1 tb sp
Salt 1,/2 tsp
Butter 2 tb sp
For masala:
Oil 1 tb sp
Jeera 1 tsp
Minced green chilli 1 tb sp
Finely chopped onion 1 cup
Red chilli flakes 1 tb sp
Finely chopped curry leaves 1/4th cup
Turmeric 1/2 tsp
Salt 1/2 tsp
Coriander 2 tb sp
Method :
At first place a small kadai in stove, add in oil. Once oil is hot enough go on adding palya ingredients one by one. Cook on medium flame until onion turns soft. Switch off the flame and add coriander mix once and let the mix cool down.
A: put all the ingredients together in the bread pan, also add in cooled palya and choose dough mixing option from the menu and let it run. It takes 1.5 hrs to mix, knead, rest and ferment.
B.Once done take out the proofed dough on to a dusted rolling pad. Mix once to remove all the air bubbles and make 6 equal parts by a knife. Again make small portions from each part. Take one portion pinch the edges from all sides and tightly roll it by hand to a soft round ball shape. Repeat the process with the rest of the dough. Place them on a greased baking tray or use a baking paper inside the plate. Do not leave much space between each bun. Cover with a cling wrap or a towel and let it doubles in size. Takes around 45 minutes to one hour. Preheat your oven to 200 degree Celsius for 5 minutes. Milk wash all the buns and bake for 15 to 20 minutes or until you see the light brown color on top. Take them out, immediately brush the buns with butter and rest for for a minute or 2.shift them on to wire rack and let them cool down completely on the rack. Super soft n fluffy dinner rolls are ready.
Recipe for making this buns without bread maker :
1.in a bowl take warm milk, add 1 tsp sugar to it and let it dissolve. Now add 1.5 tsp active dry yeast over it,cover and let it proof for minimum 10 minutes.
2.once it's proofed, take 2 cups flour or maida in a big mixing bowl and add milk-yeast mix to it. Add in 1 tsp salt, 2 tb sp butter and cooled palya. Mix and knead well nicely for minimum 10 minutes to make a sticky dough.add milk if needed.apply some oil on top, cover and let it rest for minimum 1 hr or a little more until it doubles in size. Later follow step B from above ☝️
