Many Indian restaurants are available including Udupi hotels too. But they are a little expensive. A lunch for two will cost you about 1k to 2k Indian rupees

Choosing travel package or self exploring is individual choice as u said. There are lot of KZfaq videos now, but it requires time to do research. I have planned for 10 days Bali itinerary with months of thorough research. Taxis are available via grab app in Bali.
