[Ingredients]
Prawn Shells (the more the better)
Fresh Prawns 6pcs
Pork Bone 1pc
Chicken Feet
Lean Pork 300g
Dried Chilli 20g
Dried Shallots 50g
Belachan 15g
Salt ½ tsp
Sugar 1 tsp
Tamarind Water 2 tbsp
Light Soya Sauce 1 tbsp
Rock Sugar 1 tbsp
Hard-Boiled Egg
Water Spinach
Bean Sprouts
Yellow Noodles
Bee Hoon
[Steps]

Drain the water after washing the prawn shells
Blanch the pork bone and chicken feet in cold water, rinse them clean, put them in the soup pot and start to boil the soup base
Fry the dried shallots, scoop up and set aside, use the remaining oil to pan-fry the prawn shells
Let the prawn shells cool and blend them, put them in a soup bag, and immerse the whole bag in the soup base to boil

Put the piece of lean pork meat into the soup base and cook for 40 minutes

Baked Belachan in the oven at 170 degrees for 8 minutes
Soak dried chilies in boiling water
Blend with chopped dried shallots
Slowly fry over medium heat until you see the paste and oil separate
Add Half a teaspoon of salt, a teaspoon of sugar and about two tablespoons of tamarind water
scoop up the sambal chilli

Pan-fry the fresh sea prawns with leftover sambal chilli in the wok

Season the soup after heating for two hours
Filter out the soup residue and make it boil, then add
2 tablespoons of sambal chilli and chilli oil
1 tablespoon soy sauce
1 tablespoon rock sugar
1 tablespoon balsamic

yellow noodles
bee hoon
[材料]
蝦殼 (越多越好)
新鮮海蝦 六隻
豬大骨 一個
雞腳 數隻
瘦肉 300 克
乾辣椒 20 克
乾蔥頭 50 克
峇拉煎 15 克
鹽 半茶匙
糖 一茶匙
兩湯匙羅望子水
生抽 一湯匙
冰糖 一湯匙
水煮蛋
空心菜
芽菜
黃麵
米粉
[做法]
熬湯底
洗蝦殼後把水瀝乾
豬大骨和雞腳放進冷水汆水,洗乾淨,放下去湯煲開始熬湯底
用油炸乾蔥頭撈起備用,用炸過乾蔥頭的油來爆香蝦殼
讓蝦殼冷卻後打碎,放入煲湯袋,整包浸入湯底裡熬
備配料 1
一塊靚瘦肉放進湯裡煮40分鐘
備特製叄巴辣椒
峇拉煎在焗爐用170度焗8分鐘
用沸水把乾辣椒泡軟
跟乾蔥頭一起攪碎
用中火慢慢炒,直至看到辣椒和油分開
下半茶匙鹽,一茶匙糖和大概兩湯匙羅望子水
撈起叄巴辣椒
備配料 2
用在炒鍋裡剩下的叄巴辣椒爆香新鮮海蝦
湯底調味
湯熬兩個小時後調味
把湯渣隔走,再次煮開
下兩大湯匙的叄巴辣椒和辣椒油
一湯匙生抽
一湯匙冰糖
一湯匙峇拉煎
備配料 3
水煮蛋
空心菜
芽菜
黃麵
米粉

You need to fried prawn head with lots of oil & skin till light and fragrant. Fried Prawn Head blender, into tied sand bag, put in soup. Strain, use red prawn oil for noodles soup in the bowl. Red Chilli sauce & oil (sparingly) Fragrant Prawn Head Oil is very fragrant delicious for the bowl noodles, not the chilli red oil. Base soup seasoning: 2 tbsp abalone sauce (to taste) is richly flavour & salt

教學非常非常好,有天我會照著做。但有樣東西的名稱,聽得我不舒服,就是峇拉煎被讀成塔拉煎。峇字,音巴(ba),就是峇里島的ba,不是塔。馬拉話belachan,葡國人稱作balijan,香港人稱作馬拉盞。應該是華僑在印尼及馬拉一帶弄出來的調味劑,其實就是「鹹蝦醬」,脫水後變成鹹蝦磚,方便存放及使用。澳門稱土生葡人為鹹蝦燦,諷刺他們比歐洲葡人多了一股鹹蝦味,其實也取材自鹹蝦醬(balijan)一詞。讀錯峇字很平常,我小學時也將峇里島讀成塔里島。

熬汤水的份量大概2.3至2.5L。Description哪里应该是总共用 Belacan 15g 。其中Belacan 10g 是放进去炒叄巴辣椒,而剩下的 5g (一汤匙) 是放进去熬汤的。
