ingredients:
2 medium eggplant (or 1 large)
1 cup tahini
juice of 1/2 lemon
4 cloves of garlic chopped
little water
1/3 cup vegetable oil
salt
for serving:
1 tsp shatta pepper / paprika
Herbs (optional)
olive oil
Directions:
Slice the eggplant in half, put them in a baking pan with baking paper, place them flash-side down and drizzle with vegetable oli. put in the oven for 30-40 minutes 200c / 400f.
after about 40 minutes remove the eggplant from the oven, scoop out the roasted pulpy flesh from each half and place it in a bowl.
add 1 cup of tahini, lemon juice, garlic and salt. mix everything well and add a little water if needed.
serve and season with paprika or shatta pepper, herbs (optional) and drizzle olive oil.
