I can see why you've spent enough time in Fiji taking recipes with you to try and make at home, very nice. And the salt thing is pretty much optional, either you add it into the mixture or don't regardless of various opinions that you've mentioned. Butter and jam or topped with icing sugar sprinkles (if you wanted to), these babakau are a banger washed down with lemon leaf tea/draunimoli traditionally. 😋

These are a real comfort food thing, I have Fijian work colleagues here in Oz and at the mention of babakau they're like "ahhhhh.... babakau"

They look very similar to beignets like the ones from New Orleans I gotta try them this weekend. Thanks Dean

Thanks for that Julio. I'll have to look up beignets, as I'm not familiar with them. Being so simple, I'm sure there'd be lots of similar versions worldwide.

Yummo, these look fantastic, and so fluffy inside😋😋😋I'll definitely be trying these, have a great weekend mate 🇦🇺🍻 Ps ,,was that plain or SR flour?

Hi Aussie and thanks mate. They are very light and fluffy inside, and a bit crunchy on the outside is what you're aiming for. Yeah, I used plain flour and instant yeast.

Thanks Paul. I actually left it for three hours as I had some other chores I got caught up doing. But I don't think it needed anywhere near that long.
