With this game being a canonical sequel to the trilogy, I’d like to imagine that the reason Doc got Einstein and named him that is somewhat of a bootstrap paradox. After Copernicus died we know that he got a new dog and, and like Copernicus, he wants to wants to name him after a scientist. He could have chosen from an array of many famous scientists, but he remembers looking after a dog of the same breed called Einstein for a few months back in 1931 and had grown fondly attached to him thus inspiring him to call his new dog Einstein thus causing a loop of where Einstein’s name truly comes from (◕‿◕)

My guess is that they were trying to remain true to the three movies where it's only Doc and Marty going on adventures. To include Doc's family would have been like the cartoon series.

After getting the Back to the future the game on the ps4 from the sales i would say the game did right in getting back Tom Wilson for Biff in the update as i felt Kid Beyond tries to sound like Biff but Tom wilson did it much better despite his age
