I put a comment on your last video. I deleted it because I didnt want to come off as knowing more than the content guy. In this case I really need to tell you because I just might know a trick that you want to know about bacon. Ive been making over 50lbs a bacon a year for the last 10 years. I figured out a lot of stuff, At first I was getting my bacon to an internal of about 145 while smoking. But I soon discovered that the bacon was stiff not floppy like store bacon. My bacon would also burn when frying. The problem is heating to an internal temperature starts a fat render. Drying the bacon, rendering fat and causing it to burn while cooking. This is a suggestion I hope you will try. Cold smoke your bacon for 1 hour maximum. Try to get the pit temperature under 150, 100 is even better. All you need is smoke. No need to get to an internal temperature. Its cured. The one thing you will have to change if you do this is slicing the meat. The meat will have to be frozen or near frozen. But you can now cook crispy bacon and use the bacon for wrapping peppers or making bacon explosions ect ect. I hope Im helpful and not sounding llike I am judging your method.
