Trudy has really done justice for Barbados, and the people of Barbados are very lovely and kind hearted people ❤, Trudy is true the kuku is like banku in Ghana, you can either use white corn or yellow corn for Banku or Etew Do your thing girl 🎉❤❤

This was such a heartwarming video to watch. My favorite part was at 0:42 when the little girl grabbed you from behind. You are a nice person if children you don't know ( or even dogs) feel comfortable around you. That did it for me.👍

So glad you are enjoying some bajan cooking. Like grandma said, coucou has many variations throughout the Caribbean. In the Caribbean its 99% yellow corn, and in Kenya for your Ugali you use white corn. So basically we are all using the same base...grounded corn or corn meal. In Kenya from what I see they add nothing when making Ugali. In the Caribbean we kick it up a notch...It's like using rice as a basic base and all around the world it's made so different.... Wish I could make or turn coucou...

Jamaican version is called Tun Cornmeal, which is cooked in coconut milk and seasoned to perfection. This is served with steam fish and okro.

When I was growing up, my grandmother and her generation would often make coucou in a motar and pestle adding the okra little by little. I'm St Lucian and my favorite is coucou and saltfish. (Flying fish too)

I learnt all the old cooking ways from my Bajan mother and enjoy cooking and baking all the Barbados favourites, Cou Cou, SOUSE, Rice & peas, Sweetbread, but sadly the younger generation are not so interested. So takeaway Food in Barbados now has become a big thing!

WE are making yellow stone ground grits this morning! My staple food here in the states. We eat ours with salmon or mackerel fish and poached eggs, cheese, bacon or sausage. It is eaten in the southeastern states.

In Trinidad and Tobago cou cou and stewed meats/fried fish with callaloo is also staple dish . Love barbados' version as well 😋

I went to T&T back in the 90s and I was surprised to see that the Cou Cou was sliced from a loaf, that was a first for me and it was very delicious as well!

This is the modern way of cooking cou cou. Growing up my mom use a cou cou stick she never soak her meal She would boil the okra pour it in a bowl then she would put the cornmeal in the saucepan with some of the okra water and stir letting it cook and adding the okra and stirring Her cou cou never get any lump i once try to help her stir it make me sweat

You are correct, I have never seen a Barbadian make cou cou this way by soaking it. Also, I have never seen them using Maggie cubes😅

You should try adding room temp water to the corn meal, you'll turn less.

I'm originally from the Caribbean as well, but I've eaten at an African restaurant with my hands as well, and I didn't find a problem doing it. And "YES" the food seems to taste even more delicious when u use your hands Ms Trudy ... 😊

We use cornmeal here in Jamaica 🇯🇲 alot, we also cooked it similar but with coconut milk and peanut and we call it turn cornmeal, and depending on preference sometimes we also add saltfish to it instead of peanuts and we also mixed it into flour to make dumplings and called it cornmeal dumpling 😊❤

Trudy the geera she used in the gravy is cumin girl you just found a new niche start doing a cook out series demonstration when you travel to these various countries . The coo coo is made from yellow cornmeal it is called fungi (fungee) in the Virgin Islands and in Puerto Rico funchi.

Trudy, Caribbean cuisine is delicious...Some island call it fungi most of them do it with okra, and fish on the side...It's made from yellow corn instead of the white corn.

Miss Trudy in Panamá where I am there is a province that is called Bocas this is a custom food calalu okro corne meal coconut milk to make the cucu and a nother province Colon all of us eat one pot catfish pigtail salted shrimps and bamy is made with yuca wath you call mandioca all those food were made by our parents and us because when the canal of Panamá was building Barbados Jamaican Africans continent Came to Panamá and work so this a mix country I know all those food it brings a good memory to me steam fish rondón is cocunt milk and seasoning etc

My grand parents were married in Panama before relocating to Cuba . I still have relatives there., it was great hearing a mixture of Bajan and Jamaican accents in Colon.

Whalosss... cheez-on-bread!!! Hope you tried sweetbread and fishcakes! Cou cou is similar to Ugali from Kenya. In Jamaica we call it Tun-Caan-Meal, we add meats, coconut milk and traditional seasoning (Onions, pepper, pimento seeds, scallion, thyme etc).

@@MissTrudyy You all must go to HellShire Beach in St. Catherine, its the one of the best seafood eating spot on the Island. - - Others are Little London (St. Elizabeth), - Port Royal (Half of the City is currently under the sea due to a massive earthquake in 1804) Jamaica is huge and will take you guys a while to get to all the top eating spots... For Jerk Pork & Chicken >>> BOSTON JERK in Portland is the Place to Be..

Thanks for showing the entire process. I have never seen someone not use a Cou Cou stick and opt for a whisk but maybe she is right since her Cou Cou came out so smooth ! Great content . in Trinidad and Tobago we cook our coo coo with coconut milk, ochros some people even add carrots and pimento peppers to it.

This is great/looks delicious. One critical point though, our folks should be aware that these modern pots & pans are toxic, especially Teflon & aluminum, old school clay pots are available, is what many people in India, South America, Asia & the Mediterranean still use them almost exclusively, they are safe & health supportive, you just have to learn how to use & maintain them. ✌🏾💚🙏🏽.

Yes. If using them, it is recommended to use a silicon or wooden utensils to help prevent scratching into the potentially harmful finish.

@@alexh2117 So very true! If the pan is scratched up or scorched up best to dump it, just not worth it to skimp on something that is going into our mouths everyday. I think certain kinds of oils help to ruin the coating.

Come Trinidad or Guyana or Suriname we eat with knife, fork and spoons but we do eat certain curry based dishes with our hands in public. It's perfectly fine.

Turned cornmeal! Apparently Jamaicans don’t eat it much anymore. Plus I think they cook it in coconut milk as well. The soup she refers to ls very similar to the soup that they cook in Jamaica every day, except they call the potatoes ‘Irish’ and not English!

6:31 TRUDY, TRUDY!!! I am from Barbados 🇧🇧 and visited Ghana 🇬🇭 , Africa 🌍 to complete research. On my first day, the waiter recommended a dish to me. I tasted it and was extremely confused because the taste was VERY FAMILIAR to my tongue 👅. I asked the ingredients, and it was maize 🌽 with fish on the side. I inquired of the name: BANKU 😢 I knew then that although our ancestors were removed centuries ago, Bajans 🇧🇧 still retained some of the customers.

Jamaican’s call it turn cornmeal but we don’t put okra or lime in it. We make it with coconut milk sometimes.

The older generations used eat with their hands i grew up seeing my grandmother did it but then that culture was lost in Trinidad some older generations of Hindus still to this day eat with their hands.

😂 I love the fact that after watching most islands food, you can see the derivatives of our ancestors, " Africa. I'm Jamaican, and we call Cou cuo , Tun corn meal. Instead of okra water, we use cocoanut milk Traditionally, we serve it with steam fresh fish, not can. Bajans generally stick with flying fish, but Jamaican serves it up with various types of fish. From Snapper , Grunt, Parrot, and so much more.... The main difference I observe here is that the gravy simulates the red sauce that the other part of our Nigerian family uses as the base for most meat dishes, with the exception of fewer spices. The world is truly our oyster. What's missing is the abundance of GOD'S ❤ which he has blessed us with through JESUS Christ, our LORD, and Savior. ❤❤❤❤❤

Loved seeing the lady flipping the coucou in a bowl. Never knew that. Definitely going to try it out. ... I actually can not find okra in my current location ... but hibiscus leaves are growing in my garden ... and hibiscus leaves and okra are the same family and behave the same way. Works out very well.

i cook what we called a plantation soup which the main ingredient is plenty pumpkin and then i then add sweet and English potatoes yam , okras dumplings another favorite Bajan dish of mine♥
