Baked Eggplant with chicken vegetable stuffing

Baked Eggplant filled with a chicken stuffing. These eggplants also known as aubergines, are cut in half and then filled with a chicken mince and vegetable stuffing. Topped with Parmesan cheese and baked in the oven. They make a great meal at anytime of day with their cheesy crusty tops.

JOEL, quick tip from professional chefs in the states, 1 is sicilian, 3 are italian, you may already know, but if you can find eggplant from sicily, it is a little smaller than the italian variety, but has far less seeds which is where any bitterness may came from. The state of California is also starting to ship eggplant internationally, but has the seed content of the italian variety , anyway,the seed difference is as much as an english seedless cucumber vs. A regular cucumber, i can tell the difference in taste, sicilian is less bitter

Bonjour Joel, made this for diner and it was delicious, goes really well with a salad on the side. Definitely a keeper! FYI, on your website, the breadcrumbs are in the list of the ingredients but you forgot to add them on the printed recipe itself (step 6). 😋

First of all, your channel is by far the best cooking channel. I am a passionate hotelier and working as a restaurant manager. Inspired and learnt too much things from you. Also I am not a cook but my wife is happy to have delicious meals at home :) I was going to say that, in Turkey we have an eggplant meal called as "karnıyarık" which is almost the same, instead of minced chicken we use minced meat. I hope that you can have a chance to visit Turkey and discover the Anatolian cuisine(or maybe you had already). We have very unique tastes. And I want to share one, which you may be interested. It is a dessert and named as "gerdan(dewlap) tatlısı(dessert)". Made from beef dewlap and tastes magnificently delicious.

Im trying to stay away from fried foods. Could I just stuff the vegetables and 🐔 in the eggplant raw, Then place in the oven for 30 minutes on the recommended temperature ?

Mita Majumdar i have seen them at a silver shop very similar to Joel's , but they were not inexpensive,,out of my price range for just a container for olive oil, very similar to an english teapot
