Cake gel is used for stabilization of the cake so that water and oil is equally mixed and the cake will be porous. You can make cake even without cake gel by beating egg whites separately which adds more volume to the cake.

@@vishnupriya5666 maida 120 grams, sugar 120 grams, eggs 3 separated, baking powder 1tsp, oil 50-60 grams, water 60 grams. Maida, 60 grams sugar, oil, water, baking powder and egg yolks in one bowl mix and keep, in another bowl add egg whites and sugar and whip to stiff peaks. Then fold in the egg whites and egg yolk maida mixture and bake at 160-170 degrees for 30-40 mins

I tried this recipe , it turn out good👍👍 and I replaced the pineapple essence to butter and vanilla essence but the cake was soft but not very soft . But I think we should add some baking soda and baking powder. I personally suggest to add more essence to avoid egg smell. Because I add 3 tsp butter essence and 3 tsp vanilla essence.
