The tournament you keep mentioning already happened. It took place in season 2 of the old anime. Episode 1 of the Netflix one literally happened 1 day after the tournament which is why Baki looked beat up when the show started.

As other people have said, BAKI's story is essentially 37 episodes of characters from Grappler Baki getting into random fights, and most of the plot comes from seeing how the main cast has changed since the first series, or relies on information that the sequel doesn't explain. Without prior knowledge the story of BAKI is just a series of seemingly random events from start to finish.
