I'm at it again. Another attempt to prepare something edible at camp that doesn't come out of a packet.
Historically I've not had much luck with this when the camera is rolling and this time round, well, you will see...

I love that you try these things. I was impressed how well the cooking actually worked. Nothing a tweak to the recipe will not fix.

Don’t see the funny tasting bread as a failure we enjoy the waffling and the beautiful springtime woodland. Plus there’s always the opportunity for another bread based video.

kiss = 1cup water + 2 cup bread mix + dry yeast sachet (tspn); mix into dough; rest/rise (while you get the fire setup & going); cook for 1/2hr DONE

We have something in common Jethro. I see you used a Hatchet to score the soft bread before baking. My one and only attempt at Bread baking resulted in a 'Product' so hard it required a small hand axe to smash the crust, which revealed an inedible glutinous sludge inside the kerb stone like creation. 😆

Inedible Glutinous Sludge would be a great name for a punk band 🤘 Mine was way too hard on the bottom but I managed to get in without any serious tools. It just didn't taste very good. Looking back I think my stones probably had algae or something organic on them that smoked the bread in a bad way 🤢

Something about cooking over wood makes things taste .... worthwhile? As if the work you put in amplifies the senses. I watched this just 10 minutes after finishing dinner, and my mouth was watering! It's certainly a more successful episode than the eggs. Well done!

Yeah, it's always nice to cook outdoors. This was not anything I'd call a success. It was edible but I wouldn't order it again for sure. I think my stones were probably dirty and smoked the dough with rancid moss smoke or something unpleasant like that.

Awesome! Have to say I have taken to using the old ferro rod and steel, it can be very satisfying, but it's still variable - sometimes it can work first strike or it's thirteen misfires and misses, before finally getting one on target. Nevertheless I can light my Trangia and petrol stove with it, and it certainly saves on matches. For a wood fire, my firelighter of choice at the mo is cotton wool smeared with Vaseline. Don't think it's failed yet. Read about it somewhere. So rather than buying posh firelighters I've opted to get a roll of cotton wool and a tub of Vaseline. I then decant these to a small freezer bag and a little Nalgene tub for the Vaseline. 😁👍❤

Yeah, the ferro rod is very satisfying to use and with good tinder is pretty reliable. What I really want to master is a proper flint and steel and/or fire bow but my "list of things I want to try" is long and I never seem to get round to these ones. The pine pitch firelighters are pretty good and I like the fact that I was able to make them myself from 100% forraged stuff. That is something I also find very satisfying

Yeah was thinking you could've turned the bread over when you checked midway......instead of yogurt, throw in a can of beer with the flour and salt and some butter or cheese......it's what us Aussies call a "Damper" and it's always cooked outside. I remember my first time trying to cook a damper but used my Uncle's gas oven......the bread looked good from the outside but was still very doughy on the inside......so i fed it to my cousin's dog......poor thing couldn't crap for a week lol.

Doggo sounds like me the last time I had damper, my mates' not the greatest cook (ol' mate can't boil water without burning it). Anyhoo, good call, I was going to suggest damper also. Goes really well in a billy oven.

@@francisday3187 I like the idea of doing this with stuff I would conceivably have with me on an actual ride. I doubt I'd ever bake on a long trip but I definitely wouldn't have milk with me. I'm not a fan unless its been turned into cheese ;)

That looked alright Jeffers, I think I've said it before but Beer Bread is the answer. Beer, Flour, little bit of salt, little bit of sugar, boom. And you get to drink the spare beer so win win. KZfaq "Aussie Damper" i think?

10/10 for how the bread looked; delicious! Definitely put coals on top next time, Dutch oven style. Sausages looked very tasty too 🙂👍

Yeah, coals on top is the way. But hard when you use twigs. I need to get charcoal or at least some better lump of wood. Or just turn the load as it cooks as others have suggested.

I give that bread a 9.5/10!!! It looked delicious! For the next loaf of bread maybe use the nano!😃. This was swell!

It scored far higher for look and smell than for taste sadly. I guess you could do this on the nano but it would be a precariously balanced affair. Not easy to keep the fire fed without knocking things over. Maybe once I have the technique sorted and try to adapt it for the nano. Would be cool as that is what I have with me on actually trips

The bread actually looked really good, I would say a perfect rise. Funny tasting bread is probably due to the bicarb (baking soda) not reacting completely. This would leave a slightly soapy taste. There are three cures for this. 1/ Use less soda. A recipe helps, you don't need much soda, I use 1/4 tsp measure for a cup of flour. But less soda means less gas, less rising. 2/ add more acid. There is acid in the yogurt but a good squirt of lemon juice will help all the soda react, and will increase rising. 3/ Use baking powder instead. Baking powder is a mixture of baking soda and cream of tartar (acidic powder). All the soda will react, so no soapy taste and maximum rising. Use about 50% more baking powder than you would soda. These are not haute cuisine, but they will do the job. I echo what Gary Worthington said. Love the waffle, as usual.

This is top advice thank you! I almost certainly did use too much so I will be looking up the proper proportions for next time. I possibly added some unpleasant organics on those dirty stones which was a rooky error in retrospect

@@JethroJessop Organics are more flavour. 😀Especially the ones that wriggle, more protein.😜 I always carry one of those measuring spoons (teaspoon), weighs nothing. A normal teaspoon is too hit and miss for me.

I would try some sort of nan bread type thing. Maybe mix the dough at home, leave to rise and bag up individual nans to take with you. I use half chapati flour half strong white bread flour, some yeast water and a few good plugs of oil. In fact I'd try it if I had a firebox...

I tried naans once before and it was my worst failure so far. I did try to mix and knead the dough in the dark, in the woods which was probably daft. I like the idea of doing everything at camp though. Kinda feels like cheating to make the dough at home.

The stones were not needed, the Billy can radiates a very high percentage of the heat. The roasted moss probably added to the poor taste. Try a simple tortilla recipe, no Billy can needed and very simple to cook, much less time needed too!

I only use the stones because that is what all the Firebox videos suggest. I figure once I have a successful technique under my built I can try other approaches. Sadly, I am yet to get that successful technique sorted out ;) Ad yeah, roasted moss (and probably woodlice) do not add a pleasant flavour. Note to self for next time :)

I just made some Ratatouille which I was looking forward to eating with some so called gourmet crusty bread from Mr T*sco. Well, it was flavourless and rock hard…I would much rather have eaten your ‘Artisan’ loaf.

You might have regretted that decision after a few mouthfuls, it really wasn't great. The next one is going to be amazing though! But I am a Tesco shopper as well so I sympathise with your bread woes. I've tried every loaf they do and none are better than... meh

@@JethroJessop by the way, we just cycled the John Muir way across the central belt of Scotland …a great ride, largely off-road - would be right up your street. We extended it beyond Dunbar, down to Berwick via the lovely St. Abbs head. Got completely soaked but remained smiling 😊
