Dooku, much like Anakin, was just a pawn of Palpatine in which he used their disenfranchisement with the Jedi order in order to turn them on the Order. Essentially what made Dooku turn was he became a Jedi to be a hero of the people, but then after seeing how bureaucratic, bloated, and useless the Senate and the Order was when it came to dealing the justice that he felt needed to be done he turned under the understanding he was doing it to save his people and planet from those who he viewed had become hypocritical pretenders and wants to cede from the Republic to remake a new Republic where he felt he could have done a better job then the Jedi and the Republic. This is why they used droids instead of humans like the Republic. He wanted to protect his people not send them to die. Now granted. He ABSOLUTELY gave into his hate and lost the plot and was a sith true to any sith, but he's a lot more relatable in his motivations then most Sith lords because he did it for his homeworld and country instead of purely just for personal power.
