The pitmaker Vault is one of the best out there. Had mines over 3years. You can run it like a stick burner our combination of charcoal and wood. You get the best of both worlds.

Offset is something I'd still prefer, but that is a super interesting set up.

I smoke with a vertical cabinet with the firebox on the side, with a baffle, I can smoke 8-10 racks beef or pork or hang sausage. With your fire video, salen delicioso!!!!

I have a offset smoker It is great for smaller cooks. I had a pit maker vault and it worked very well for large cooks. I am retired now, and I am doing a lot of cooks for the church. I am looking to purchase another one soon. Thanks for your video.

My last and best one was a hot and fast about 6 hours no wrapping @350 Im a low and slow guy but I ruin them everytime until I tried it H&F Im awesome with pork but determined to get the brisket perfected! I just started following your IG as well

i like both.an insulated cabinet for going overnight with sleep,then fire up a stickburner to finish or for a new round of quick items like ribs or chicken the next day.Two services,each going around a a 8 hour cook session like he does in this video.BTW i have something right in the middle coming,HBT Xpress so i will review that and see if it comes out somewhere in between a insulated vertical and a horizontal offset,i am interested.Ciao!

If I sold Q it certainly would make a lot of sense or cents to go with a cabinet but an offset certainly has that classic bbq look!

Not all areas of the country have easy access to wood though. If I could not get wood, a Pitmaker Vault/Safe would be my #2 pick.

Max, did you taste the brisket? How did it compare to an offset smoker? I've never tried anything from a Pitmaker, but I can tell when BBQ is cooked on an Old Hickory and Southern Pride type cooker (not good). I'll try Harlemroadtexasbbq when I'm in the area, but I will stick with with my Moberg 250 offset! Great video as usual, though !

The bbq vault is sompletely different than those smoker. Actually u can barely taste the smoke. Harlem Road is on the top 25 best bbq in Texad according to Texas Monthly. But like you just said the best way to find out is to try yourself, the trip will be worted...

I have been here a couple times. I think the BBQ is as good as any of the top joints. Its slightly different, but not in a bad way. It was better than what I got served at Tejas BBQ a couple weeks ago.

very interesting pit....looks efficient too but im a traditional guy. i like to mess with the fire, being more involved with the cook and off course WOOD has no competition. i will still love to try the food coming out of that pitmaker

I have a Vault and trust me, just because it's efficient doesn't mean you aren't fussing with the wood/charcoal....you still have plenty of work to do. In this video, I have no idea what this guy is talking about, I still wrap (foil) my briskets and when he's talking about 24 briskets, that's absurd! Each rack can hold 2 briskets and you have 5 racks total but you never want to load that heavy, the heat would be inhibited and the top would cook hotter then the bottom, the most I do is 8 and even then I'm sometimes shifting around racks to help even-out the cook. But yeah, you still got a fire box and plenty of work keeping it going!

So, do you fill the water pan in the beginning when you heat up the racks with the blowtorch? Lots of questions regarding that water pan as it can slow the rate at which you heat up the vault or if you just let it go with out putting any water in it.

Water pan is mostly to collect for the dripping of the meat in order to avoid stinky smoke...

Yes, it is a reverse flow. The heat from the fire box on the bottom will go up the back wall of the cooking chamber through a channel almost as wide as the cooking chamber and will come out above the top cooking rack at the top of the vault. The heat will then travel down the cooking chamber and out through channels on the left and right of the cooking chamber to the outlet vent on the top of the Vault. When the vault is empty there is only a small difference in temperature from top shelf to the bottom shelf. When fully loaded with meat I have seen the temp about 60F different from top to bottom, with the top being warmer.

If you want to avoid dripping of the meat interact with charcoal you should use it. Not really for keeping the cooking chamber moist.

what's a good in-between? and who would their competitor be? i like the build and quality from the vid but i'd like to see something like the Old Country Smokehouse with insulation only where it needs it, and extra rack but keep that wood fire design.

I have a Pitmaker Vault, same model, and NO WAY you're gonna cook a full packer brisket in 8 hours unless you're pushing 285F and even then, it would have to be a small 11-12 pound brisket. I cook brisket all the time and I used to roll at 235F and it consistently took at least 12 hours and as much as 15 hours! This guy says he does it in 2 stages (which makes no sense) but maybe he's talking about 2 sets of 8 hours? Something is very wrong with this video, the info is bad!
