I really, really need to get on this costco train. I saw a recipe the other day (on YT, Mama Tenny who is badass) that I have yet to try but you would probably like it. You bake a sweet potato (in advance if you want), cut it into thicker rounds. Place two rounds on a pan, kind of smush it down in the center, crack an egg into the well - add spinach, tajin, bit of water then cover and bake til the egg is cooked. :)

I also try to eat clean as possible and don't trust the "natural flavorings" on labels. I also wash all produce right away including fruits with skins like avocado and banana and mango and lemons and oranges etc. bc when you cut with knife the germs will transfer to the fruit. And I've heard recently not to cook with foil bc aluminum gets into the food (heard that from Shea Whitney). Wow after reading back this comment it sounds so negative...I don't mean it to be...I know how you try to eat clean as do I. So excited for all the beach house content. It's going to be so fun 💜💙💚💛🧡

Yup my Dr. told me to wash those fruits as well just for that reason. When you cut them bacteria and parasites can get in.
