interestingly the customers you see is just architecture, the amount of customers is equal to the amount of square meters your building can have. also using the 3 dollar subway is way better than taxis (unless they fixed it and the price scales with distance for subways now too)

"How are businesses worth so much money?" Well... they actually buy the equipment and furniture to set up a proper food business. A lot of that "estimated value" is in the property and equipment, and it's based on their annual income. This is a game though, so it's more likely the devs wanted to make it very expensive to buy out your competition.
