Another question: why did she stop at nectar and say theres no point in going to honey at around 13:50? I'm confused

I'm from the UK so may be slightly different but if there are no overt clinical signs of penetration/aspiration and Pt reports all felt good, I can assume at that point that consistency is safe. A thicker drink would likely yield the same results but we wouldn't put a Pt thicker than they need to be. Hope that makes sense 😊
