Today we are making Chinese beef and broccoli stir-fry! Beef and broccoli is a really simple Chinese dish that is served at pretty much every quick service Chinese place. However, some places I've been to, I find that the broccoli is over cooked, and the sauce is overly thick and goopy. Cough Panda Express Cough This could be from the trays of food being heated all day long for quick service take out. Over cooked broccoli loses it's crunch as well as the nutrition value. It turns soggy and dark green, loosing its vibrant green color and luster.
It's easy to make beef and broccoli stir fry at home with this beef and broccoli recipe. This dish is a great way to add in more veggies in our diet because I use just as much, if not more veggies than I do beef and it tastes great! Not to mention it is a good way to get those kiddos to eat their broccoli. 😉

Beef and beef marinade ingredients, mixed together:
8 oz beef, sliced thinly at an angle (we used flap steak here)
1 tsp minced ginger
1/8 tsp white pepper or ground black pepper
1/2 tsp sugar
1 tbsp Chinese light soy sauce
1 tbsp Shaoxing rice wine
1/4 tsp salt
1 tbsp corn starch
1 tbsp cooking oil
Sauce ingredients, mixed together:
2 tbsp Chicken stock or water
1/2 tbsp Shaoxing rice wine
1/2 tbsp Chinese Dark Soy Sauce
1 1/2 tbsp of oyster sauce
1/2 tsp sugar
1/2 tsp salt
Other ingredients:
8 oz broccoli or broccolini
1/2 onion, sliced
1 tbsp minced garlic
Corn starch slurry (1 tbsp corn starch + 1-2 tbsp water, stir right before adding)
1 tbsp sesame oil
cooking oil
Directions:
1. Blanch broccolini in hot/boiling water for about a minute. Drain and set aside.
2. In a hot wok, add oil and garlic and cook on medium heat until it begins to brown. Push garlic aside and add beef in an even layer. Let sear for a minute, then flip. The key is to leave it alone during that time. When the beef begins to release moisture, mix it with the garlic and stir fry until it is about 90% cooked. Remove from heat and set aside.
3. In a hot wok, add oil and onions. Stir fry until separated and they begin to brown. Add broccolini and mix it together. Then add beef and mix.
4. Add sauce to edge of wok and stir fry for a minute or two. Spoon in your corn starch slurry and let cook for a minute. Add a little at a time until you reach the sauce consistency to your liking.
5. Add sesame oil, give it a stir, and serve. Enjoy!
