Thanks! Nope, no restaurant. I just love to do me some cooking. An uncle asked me where I learned to cook, because I made some brisket in the dutch oven on Friday, and I just told him I threw myself into the fire of learning years ago. I've never taken any classes I just teach myself I guess. As long as my cooking satisfies others I will enjoy every bit of it.

That's correct. We have to let the meat do the talking, and not spice it up too much. Sometimes less is more. Plus, beef is effin delicious with just salt and pepper.
