Today I have amazing meat on my barbecue. A 3 kilo giant. I cook beef ribs, aka Asado. It was cooked on the barbecue for about 7 hours. I cooked for 3 hours. Then I wrapped it in foil and baking paper and cooked it for another 4 hours. At the end of this period, I rested the meat in the foil for another half hour. You can also make this recipe in the oven. Wrap directly in foil and baking paper. Bake at 200 degrees for about 6-7 hours. Juicy and tender, very tasty meat. But it is soft if you cook it this way. Otherwise it's tough and fibrous meat.
