Chicago native here. Way I do it is sweating onions and green bell peppers in a stick of butter. Then toss in some good quality bratwurst. Poor in a strong IPA until everything is covered by it (usually takes about 3-4 beers). Cook on high until it reaches a boil, then bring it down to a simmer for at least 90 minutes - it's gonna smell weird at first and then god damn does it smell good. Once done, fry them up to get the skin crispy. Serve with some of the onions you cooked, mustard, or even some pickled red cabbage. I've tried several different styles of beer. IPA imparts the most flavor, trust me!

I do beer brats similarly- brown and then boil the brats in guiness, two sticks of butter and sliced onion. Then grill them for a couple mins and then let them rest in that butter beer mixture for like 15 mins before serving. Spicy whole grain mustard on some buns and you set
