I want to bust the myth that you need a cheese cave to make cheese at home. In the process, I have also put together a list of cheese that is a good beginner guide for the newbie curd nerd who doesn't know where to start.

Longer videos show the whole process, and all the small details that crop up. Even if many steps to make different cheeses seem to be the same, the longer videos let us se how the curd is cut, how it behaves at different temperatures and so on. That's all really important information. So please keep the details in your videos, they're great! Another thing is that you seem to be able to tell us so much extra as you comment or do voice over. The fact that one of your posts just reached 1 M views says it all, really. So keep it up, and so many thanks for all the hard work! 😊

Honestly... key information and in-depth observations of potentially unexpected situations and how they can be properly dealt with are much more accessible in the longer videos. I like it and enjoy every minute of them. Anyway, if anyone wants a shorter video and needs to cut to the chase, they can just skip through the video and in that regard everyone can be happy. After all, you're not blogging about nonsense, you're teaching how to make cheese. (A real cheese maker should have patience.)

I don't care how long they are as long as the instructions are thoroughly explained and easy to understand since I can set aside my own time to watch them. I would think that those who really want to learn would feel the same. I just found your channel a couple of days ago, subscribed, and enjoying every minute. Thanks for making these valuable lessons available.

For those who haven't tried panner yet, it's really neutral in taste so you can put it in any dish you want, season it with any spices, put it in your salad, in your sandwich, its a great companion with any salty dish. It's insanely popular here in India, we eat it almost every day. P.S. Great Videos, Love from INDIA

I think the videos should be as long as they need to be. The only thing I dislike is when the instructor goes off on tangents. I've never witnessed that in any of your videos. If just like to say I appreciate all the effort you have gone to making clear and concise tutorials. One question I do have though, can you do a tutorial about additives and the steps you have to take to add things to the cheese like cranberries, walnuts, fresh peppers, herbs, etc. Also what are some of the things you can and cannot add to your cheese.

I prefer the longer videos. I have been cooking and baking for over 30 years. I have only barely started cheese and yogurt making. I like the longer videos as they are very instructive and highlight the important points.

I agree that if you cut the length of the videos, you may not have the time to provide key or important information. They should be as long as they need to be for successful cheese making. Keep up the good work. You are inspiring.

I like the longer Videos but they are all a good length. what I like to do is watch one in full before making cheese & then use it as I am making the cheese, pausing when I need too. Much better than reading the book when making it

Way late to the conversation (Having just become cheese obsessed this summer) but my theory on this is MORE information is better and if someone doesn't need at all they can use the fast forward. I like that you're super specific. It's super helpful.

As a teacher for over 30 years, I can confidently tell you... regardless what the subject is, your presentation should always be similar to a lady's dress. It should be long enough to cover the subject, yet, short enough to stay interesting.

I really like the longer format. If I want the detailed information on the process that I typically need as a rookie, it's great to have that available, plus to be honest the way you film and narrate is pretty relaxing and enjoyable anyways. Plus, when I just want a quick reference, it's easy to just jump around from section to section as needed. Cheers and keep up the great job!

G'day, Gav! This vid is especially helpful as it pulls together the non-cave cheeses and helps us nascent cheese wannabes organize our thoughts about what we can do. VERY HELPFUL! As far as length, the vids need to be as long as they need to be, but I feel sometimes you linger too long on stirring. I like that you start with your mis en place, but wish you would hold the ingredients title a little longer so I can hit pause to write them down. Sometimes when you are working very late at night, your fatigue is noticeable, and your description is a little confusing, so using subtitles as you do is good. All-in-all, we are grateful for your delicious work. Thank you!

I wouldn't change anything. You go over must know, must watch stuff. I always watch twice. Once before making the cheese and then again while making it and hit pause as needed. Thanks for what you do! Enjoying some cream cheese this evening because of you and can be added to the list of cheese you can make with no cheese cave.

I enjoy the long and short videos. I guess I would like the longer videos a bit more. Here is an idea. I don't know how much more work it would be for you, but one of my favorite BBQ KZfaq guys puts markers on his videos. He does this especially on the Q&A Videos so people can go directly to the question that interests them. However you could mark the different steps, so the cutting, pressing, etc. whatever. Just an idea. Thanks for the great content.

I like long ones for as my first watch in order to learn everything useful and essential, but the short ones are better while I make cheese, so I can quickly find the stage I'm at and refer to it.

I've just recently started watching your channel and I haven't used your videos for their intended purposes yet, but my it seems to me the 30 min. long videos don't get repetitive meaning it's all information to help you succeed in making that particular cheese and in my opinion a good rule of thumb is that you can never have too much information going in to any project.

I think your videos are good. You dont go on & on about "here is what we're going to do" "my family loves this because..." Some people just make it much longer than it should be. But you go right into it. I like that. And if some cheeses take more explanation, so be it.

I think your doing a great job on your videos. The way I see it, the longer the vid the more info you share with us. Your not boring us on long vids by making us watch you stir the pot for 10mins. Some cheeses may just take longer or may have more complex directions. So keep doin what your doing Gav, you give the best info on home cheese making out there. thanks

You have no need to change your approach to producing the videos. Keep them as long as you feel they should be. That sounds about right to me.

About 4 months ago I started getting raw milk from the neighbor; about 3 gallons a week. Using your videos I have made Butterkase, cheddar, cream and Gruyere. Thank you, Gavin! Please keep making videos.

Video length is not an issue because we can use controls to fast forward or rewind to get to the info we need. But if you leave something out we cant get to it. Thanks for what you do.

I am an uber fan of the longer videos because yes I do learn more from the video than just watching you make the cheeses. One thing to watch a ten minute video and just see the cheese at different stages, another thing when the videos are very informative and you can't teach that in ten minutes or less. Thank you Gavin.

Make the videos as long as they need to be. The shorter videos are more entertaining, but if I got serious and finally got the stuff to start making cheese myself I'd be very happy to have access to the longer and really in-depth guides.

I like the detailed and therefore long videos when I am making something for the first time. After a successful batch I like to make a word document with details of temperatures and amounts and use the videos only as an occasional refresher. thanks

For anyone curious, any fridge or freezer can be converted into a cheese cave by using a temperature controller purchased from most home brew shops and online. Examples in Australia include the "Keg King MKII" and the "Inkbird ITC-308". They are used by beer and wine makers at home to create a warmer fridge than your built in fridge thermostat will allow. They do the job perfectly for cheese making when combined with an automated humidifier, such as the kind used for humidors. Hope this helps.

Please!! Keep them longer, I love that you go into great detail and because of the level of detail on the videos, I have learned so much from you! 5 cheeses in the cave so far, all turned out great. I think the shorter ones are actually better for learning because you keep it down to just the right information without filler. The longer ones are more enjoyable to watch as I feel that I am more here to watch you than to learn how to make cheese.

I'm a subscriber now......just happened on a video and have binge watched a bunch....now to start making the beginner varieties.....keep mixing up the durations, as you say " it takes as long it takes " kinda like the cheese itself......thank you for being a regular guy , shows any of us can do this ! With some effort and your how-to step-by-step.......mozzarella will be my first--- who wants Pizza ?

you could put an edited summary video at the end that you can click to skip to. just each step and the information needed for people that just need the cliff notes. Keeping it in this video also wouldnt split the viewer base

Gavin, thanks for making these videos and showing us how to do it right. Since living in Switzerland since 2017, I’ve become very fascinated by and interested in the many different cheeses available and how they are used in cuisine. I’ve recently decided, in the past two weeks, that I want to start making my own cheese. Your videos are helping me to form a solid base of understanding and knowledge. Currently, I’m looking into equipment in order to get started.

I've made queso blanco. It is the same process you described for paneer, except you don't add yogurt. It is a very common cheese here in the SW USA and Mexico. Often you will in Mexican restaurants you will get queso blanco or queso fresco. it is used either in its crumbled form or pressed. I agree it is the easiest cheese to make. I brought a gallon of milk to 180 F and added lemon juice. After it separated I drained off some of the whey. I tied it up in cheese cloth and attached it to the handle of my kitchen cabinet door. I hung it above a big bowl. It was delicious with just a little salt. It is used in mostly in Mexican cuisine but can be used in other foods. I found it delicious in scrambled eggs and as a grilled cheese sandwich.

Length seems fine on all your videos. Short taste tests, medium demo tutorials, med - long Q&A. It seems you need a FAQ link for all the videos, as you have to answer same beginning cheese & no cheese cave questions over & over. I bought an inexpensive fridge thermometer and moved it around to determine the warmest spot in my fridge, so that's my cheese cave. One of the bottom bins stays about 47° to 48°F which seems to work just fine.

Love your videos.The longer length videos are great. They give much needed details, especially for beginners or for those want to pursue cheese making as a hobbies or other. I just found your channel and I'm so excited! I've been very interested in trying 'exotic' cheeses and learning to make my own for the last five years or so, but I have had too much on my plate (not enough cheese though) to do so until now. The other day I decided it's time to start and I really could not have found a better KZfaq mentor. As for your question, most everybody has agreed that the longer and more detailed the better, and that's my thought too. If anybody feels it is too long they can skip around if need be, but if it's too short than we would just be S.O.L. Thank you for your videos!
